Ingredients

  1. 1 ½ cups water
  2. ¾ cup white rice
  3. 1 (13.5 ounce) can coconut milk
  4. ¼ cup white sugar
  5. ¼ teaspoon salt
  6. ½ cup milk
  7. 1 egg, beaten
  8. 1 tablespoon extra-virgin coconut oil
  9. ½ teaspoon vanilla extract
  10. ½ teaspoon coconut extract
  11. 1 wedge fresh pineapple (Optional)

Instructions

  1. Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 20 to 25 minutes.
  2. Combine rice, coconut milk, sugar, and salt in a pot; cook and stir until thickened and creamy, about 20 minutes.
  3. Beat milk and egg together in a bowl. Spoon 1 to 2 tablespoons rice mixture into milk mixture and beat to warm and temper milk mixture. Slowly pour milk mixture into rice mixture while constantly beating; cook, stirring constantly, until pudding is heated through, 2 to 3 minutes.
  4. Remove pot from heat and stir coconut oil, vanilla extract, and coconut extract into pudding; refrigerate until chilled, about 1 hour. Garnish pudding with pineapple wedge.

I really like this recipe. I am not a huge rice pudding fan (made this for my husband) but I really like the coconut flavor. I only made 2 changes. Rather than using white rice, I used 2 cups of plain jasmine rice that I had in my refrigerator from making in my Instant pot. I also used almond milk rather than regular milk. This is a keeper!

My family said this was just ok. They prefer traditional rice pudding with a sprinkle of cinnamon. I guess I wouldn’t be making this again since no one would eat it and I wound up throwing it out.

I didn’t use the pineapple. I sprinkled it with fresh nutmeg, whipped cream, and ate it warm. Yumm

I’ve made this recipe a few times and has turned out well each time. I always omit the coconut oil and use butter instead. I skip the extract as well, not totally necessary but Im sure would improve the flavor. I normally omit the sugar as well, I just don’t think it needs it. I have doubled this recipe for family dinners and it was great. This is the only straight forward coconut milk recipe I could find online. Well done!
