Ingredients
- 3 3/4 pounds pork shoulder, cut into chunks
- 1/4 cup olive oil
- 1 tablespoon minced garlic
- 1 1/2 teaspoons kosher salt
- 3/4 teaspoon ground black pepper
Instructions
- Place pork in a container. Add oil, garlic, salt and pepper and mix very well. Marinate, refrigerated, overnight.
- Stack pork on a rotisserie spit. (You should have enough to make two separate spits of pork.) Place each spit into a rotisserie and cook for 1 hour at high heat.
