Kiwi and Lime Soup with Sea Salt

Ingredients

  1. 1/2 seedless watermelon
  2. 2 kiwis
  3. 2 limes
  4. 1/4 cup sugar
  5. Coarse or gray salt, to taste

Instructions

  1. Peel the watermelon and cut into slabs, like fillets. Using the most seedless portions, cut watermelon flesh into 1 1/2-inch cubes. Using a small melon baler or a demi-tasse spoon, hollow out a depression in the top to form a little cup.
  2. Peel and roughly cut up the kiwis. Place the pieces in a blender or food processor with the lime juice and the sugar. Puree then strain out the seeds. Add a few seeds back to show it is kiwi. Place watermelon cubes on a platter and fill the depression with the kiwi puree. Serve cold and lightly sprinkled with course salt, and eat with your fingers!

I brought this to my sisters 25th wedding anniversary. I must say people were hesitant at first when I said it was cold soup. But after they tried one they kept coming back.

I put the the “soup” in a measuring cup to make it easier to pour, worked really well.

I highly recommend this tasty, different appetizer for a summer party.

Maybe I’m just a messy person but I got stuff everywhere 🙂 It was quite tasty though!!! The combo of sweet and sour was perfect.

I actually cut my watermelon into little triangles so it was like little watermelon wedges. It turned out well.

This is a great warm weather snack.
