Ingredients
- cooking spray
- 2 cups frozen shredded hash browns, thawed
- 2 eggs, beaten
- ¼ cup milk
- ¼ cup all-purpose flour
- 2 tablespoons diced onion, or more to taste
- 1 tablespoon sriracha sauce, or to taste
- 2 cloves garlic, minced
- ½ teaspoon baking powder
- salt and ground black pepper to taste
Instructions
- Preheat a waffle iron according to manufacturer’s instructions; spray with cooking spray.
- Mix hash browns, eggs, milk, flour, onion, sriracha sauce, garlic, baking powder, salt, and pepper together in a bowl to make batter.
- Pour 1/4 of the mixture onto the preheated waffle iron; spread to the edges with a spatula. Cook until golden and warmed through, 5 to 7 minutes. Repeat with remaining batter.
- Half a diced jalapeno and 1/2 tablespoon of sriracha sauce can be substituted for the 1 tablespoon of sriracha sauce if desired.
- Any variety of milk, alternative milk, or 1/4 cup egg whites, can be substituted for the milk.

I added bacon, but this was a creative way to make breakfast for dinner….just not much flavor.
I rate it a 5 as is, and I tweaked it a wee bit. I added 1/3 cup shredded cheese, 2T diced jalapeño, full T of Sriracha. The eggs I used were XL so I did not add extra milk. Recipe as written made a perfect brunch for hubby and me. We will make this again!

From three to four stars. The waffle solo is kind of bland & not as crispy as I’d like. ‘Thinking a little melted butter or oil in the batter could help that; & less milk. What a neat idea for something different, tasty and hearty! Simply Potatoes hash brown potatoes work great. Upped the onions. And it gives my waffle maker another use. Im thinking about trying this with leftover mashed potatoes next time. Keeper recipe!
I used tobasco instead of saracha, and seasoning blend instead of salt. turned out terrific. Husband was pleasantly surprised.

This was good. I added a little shredded cheese to the mixture and then melted some more cheese and turkey on the top. This is a great brunch recipe.
These were fun and fabulous! I made exactly as written and they turned out perfectly. The only one thing I think they could have benefited from is cheese. The texture of the batter was pretty thick as it was so I’m thinking you’d have to add more milk if you were going to add cheese but I do think cheese would be a big bonus. Regardless, these were fun, easy, and tasty and I will make again.
