Ingredients
- 1 pound kielbasa sausage
- 1 tablespoon olive oil
- 1 medium red bell pepper, cut into chunks
- 1 medium onion, cut into chunks
- 2 teaspoons minced garlic
- salt and ground black pepper to taste
- 1 medium apple, cut into chunks
- ½ cup shredded Cheddar cheese
Instructions
- Remove skin from the kielbasa and slice into bite-sized pieces.
- Heat oil in a large frying pan over medium heat. Add kielbasa, bell pepper, onion, and garlic. Fry until veggies have softened, 5 to 7 minutes. Season with salt and pepper.
- Stir in apple, then cover with Cheddar cheese. Cover the pan and cook until cheese has melted, about 3 minutes.

Very tasty, will make again! I like to up the veggie factor so added peeled, cubed beets and butternut squash. Cooked them in the oil before adding everything else.

5.22.22 I added the garlic a little later in the cooking process and cooked the apples for a bit longer at the end, and this turned out delicious. Cut up the veggies and the kielbasa in the morning, refrigerated, and then had a quick-and-easy dinner in the evening. Comfort food at its finest, very tasty!
