Ingredients
- 1 pound mild Italian sausage
- 1 ¼ teaspoons red pepper flakes
- 4 slices bacon, cut into 1/2-inch pieces
- 1 large onion, diced
- 1 tablespoon minced garlic
- 5 (13.75 ounce) cans low-sodium chicken broth
- 1 cup cauliflower florets
- 1 cup heavy cream
- ¼ bunch spinach, tough stems removed
Instructions
- Heat a Dutch oven over medium-high heat. Add sausage and red pepper flakes; cook until crumbly, browned, and no longer pink, about 10 minutes. Drain excess grease and transfer sausage to a bowl.
- Reduce heat to medium and cook bacon in the same pot until crisp, about 10 minutes. Drain, leaving a few tablespoons of drippings in the pot. Stir in onions and garlic; cook until onions are soft and translucent, about 5 minutes. Pour in chicken broth; bring to a boil. Add cauliflower and boil until fork-tender, about 20 minutes.
- Reduce heat to medium. Stir in heavy cream and the cooked sausage; heat through. Mix spinach into the soup just before serving.

This is a great hearty filling Keto soup! The broth and the cream have a wonderful taste! I used sliced up mini Barese sausage because we love those. Will make again!
Great soup! I made it dairy free. I omitted the cream and to give more body I mashed 3 florettes of steamed cauliflower and added to the broth.
I changed the original recipe quite a bit, from making this wonderful soup in the past! I made my own turkey Italian sausage (not a fan of store bought), instead of heavy cream I substituted coconut milk, and used kale instead of spinach! AMAZING! Will for sure make again!
This is the perfect soup on a cold winter night. I had chicken Italian sausage so that is what I used . will defiantly make this again sprinkled some Parmesan crisps on the top for extra favor.
I left out the bacon (not a bacon lover) and used more broth than called for (to feed a big family) and it was fabulous. It’s spicy with the crushed red pepper, so cut the pepper in half if you like it a little milder. My kids (12, 13, &14) loved it, too.
I really like this recipe. It is the same as Super Delicious Zuppa Toscana, with the cauliflower being subbed out for the potatoes. I had made the other recipe and didn’t like it as much as I had hoped, so for this recipe, I used hot Italian sausage and omitted the red pepper flakes. It made all the difference for me!
