Ingredients
- 2 (8 ounce) packages shirataki noodles, drained and rinsed
- 1 tablespoon olive oil
- 1 tablespoon minced shallot
- 2 cloves garlic, minced
- ¼ teaspoon red pepper flakes
- 12 ounces raw shrimp, peeled and deveined
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- 3 tablespoons fresh lemon juice
- 3 tablespoons dry white wine
- 2 tablespoons butter
- 1 tablespoon chopped fresh parsley
Instructions
- Cover shirataki noodles with water and bring to a boil. Boil for 5 minutes. Drain.
- Return drained noodles to the saucepan and cook over medium heat to remove any excess moisture, 5 to 6 minutes. Remove from heat and set aside.
- Drizzle olive oil into a large skillet over medium heat. Add shallot and stir until translucent, 2 to 3 minutes. Take care not to burn. Add garlic and red pepper flakes; stir for 1 minute. Add shrimp and cook for 2 to 3 minutes per side, taking care not to overcook. Season with salt and pepper.
- Transfer shrimp to a bowl, reserving pan drippings in the skillet. Whisk lemon juice and white wine into the skillet. Add butter and cook until fully incorporated and sauce begins to thicken slightly, 3 to 4 minutes.
- Return shrimp to the skillet. Add noodles. Sprinkle with parsley and toss to combine.

Use angel hair noodles. I been making shrimp scampi many many years add butter with oil to sauté onion ñ add 3 to 4 garlic cloves large chopped. Add red crushed peppers flakes to taste ¼ c. chicken broth with 2 big squirts lemon juice stir well add ¼ to ½ c. white wine – 1 T. dried basil – lots grated Romano grated cheese cook 5 minutes add more butter- NOW ADD shrimp just cook thru top dish with chopped onion stems or chopped fresh cilantro or parsley. I USE cilantro ñ have lots fresh crusty twisted warm bread to sop up the broth.

I used Pasta Zero Fettuccine Shirataki noodles and followed this recipe to cook them. They were delicious in this! They do have a slightly fishy smell upon opening before I drained and rinsed but they didn’t taste fishy at all. I will definitely make this again!
I used more shallot, garlic, and lemon because you can never have too much of all that. I couldn’t find those exact noodles so I opted for a rice based pad thai noodle and I liked it just fine.
OMG, this is so good! I made it 2 nights in a row, and hubby already asked me to make it again this weekend. Shirataki noodles take some getting used to, but to those following keto, they are a welcome substitute for pasta. Make sure you follow the directions in this recipe on how to prepare them properly because simply taking them out of the bag and rinsing isn’t enough. The flavors in this recipe are well-balanced and the shrimp is perfectly cooked. Even if you aren’t keto, make this, and serve over regular noodles. You won’t be sorry!
If you are thinking of making this recipe, I urge you to use anything other than Miracle Noodles as the recipe calls for. This recipe was the first time I ever cooked or tasted them, and they were so unpalatable that I could not stomach this meal and had to throw it away without eating. They didn’t absorb much flavor and have a rubbery texture; not at all el dante at all. I noticed the package instructs users to avoid using the noddles in spaghetti-style dishes because they aren’t a good replacement for Italian noodles; which was my first sign this recipe would be a bust. Based on the time and money I wasted and then not even being able to eat the meal, I have to rate this as a 1-star recipe. I don’t think there was anything wrong with the sauce or shrimp, just don’t use miracle noodles!
So much flavor! The shirataki noodles are not the same as real noodles, which you will miss. But they have zero calories and zero sodium so are well worth the substitution. Just get used to them as a unique thing, and don’t mourn for pasta. I am not on keto, so I cut the butter in half and doubled the wine and lemon. It was very very good.
I made this and it was great. However, I Spiralized yellow squash. But that was the only change. It made sticking to this diet easier when there is good food.
