I use fresh tomatoes from my garden to make this green pepper salad. The secret is to let the food marinate and refrigerate so that the flavors may meld.

Ingredients

  1. 1 (9 inch) pie crust pastry
  2. 1 cup light corn syrup
  3. 1 cup white sugar
  4. 4 eggs
  5. 1 ¼ cups chocolate chips
  6. 1 cup chopped pecans
  7. ½ cup butter, melted
  8. 2 tablespoons bourbon (Optional)
  9. 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Press pie crust into a 9-inch pie plate.
  2. Beat corn syrup, white sugar, and eggs together in a bowl using an electric mixer on low speed until well blended; stir in chocolate chips, pecans, butter, bourbon, and vanilla extract. Pour mixture into the prepared pie crust.
  3. Bake in the preheated oven until set, 45 to 50 minutes.
  4. Walnuts can be used in place of the pecans if desired.

It was soooo watery! I had to finally look up another recipe and found out you are supposed to let it sit for 2 hours. This is something that needs to be noted and included for overall time to complete recipe. Anyway it was a little too sweet and the directions were very unclear.

Cut the slices thin and add the ice cream! This is one rich and yummy pie! I did need to add to the cooking time for the pie to set. Be sure to cover it with foil too.
