Karen’s Fruit Pizza

This is a simple dish, and the crust is made from cake mix. Use your creativity to adorn it with your preferred fruit. The fruit pops in your tongue because to the cream cheese layer and fruit sauce. Delicious!

Ingredients

  1. 1 (18.25 ounce) package yellow cake mix
  2. 2 eggs
  3. ¼ cup vegetable oil
  4. 2 (8 ounce) packages cream cheese, softened
  5. 2 cups confectioners’ sugar
  6. 1 teaspoon almond extract
  7. ½ cup sliced fresh strawberries, or as desired
  8. ½ cup diced pineapple, or as desired
  9. ½ cup sliced fresh peaches, or as desired
  10. ½ cup white sugar
  11. ½ cup orange juice
  12. ¼ cup lemon juice
  13. ¼ cup water
  14. 2 tablespoons cornstarch

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease two 12-inch pizza pans.
  2. Mix cake mix, eggs, and vegetable oil together in a bowl until batter is just mixed; press into the prepared pizza pans.
  3. Bake crust in the preheated oven until lightly browned, about 10 minutes. Remove crusts from oven and cool completely, at least 30 minutes.
  4. Whisk cream cheese, confectioners’ sugar, and almond extract together in a bowl until smooth; spread onto the cooled crusts.
  5. Arrange strawberries, pineapple, and peaches on the cream cheese layer.
  6. Combine white sugar, orange juice, lemon juice, water, and cornstarch together in saucepan over medium heat; cook and stir until glaze is thickened, 5 to 10 minutes. Remove saucepan from heat and refrigerate glaze until cooled, about 20 minutes.
  7. Drizzle glaze over fruit and refrigerate pizza until chilled, at least 30 minutes.
  8. Any variety of fruit can be used for the topping.
  9. A 10×15-inch baking dish can also be used in place of the two pizza pans.

I love how easy the yellow cake mix cookie crust is. I didn’t do the glaze since I was in a hurry. We used strawberries, raspberries, bananas, and blueberries. Very tasty.

This is an amazing recipe. By far my favorite one for fruit pizza. I’ve been searching for one similar to this for a long time. My aunt used to make one with a yellow cake mix crust. I like it way better than the sugar cookie crust. Love the homemade fruit glaze…Perfect finish to the pizza.
