This BBQ chicken salad is extremely reminiscent of a dish from a well-known eatery close to my house. I made it at home since I was so happy with it there. This salad is now one of my favorites to cook!

Ingredients
- 1 bunch flat-leaf kale – ribs trimmed away and discarded and leaves cut into 2-inch pieces
- 1 tablespoon olive oil, or to taste
- sea salt to taste
Instructions
- Arrange kale pieces on microwave-safe plates so they do not overlap. Drizzle olive oil over the kale pieces; season with sea salt.
- Cook each plateful of kale in microwave oven until crispy, 2 to 2 1/2 minutes per batch.

Easy and tasty! Keep an eye on them though. Had a flame flare up just before 2 minutes. Stopped and they were crispy and tasty!! Parchment paper was a great idea!!!
Mine caught on fire
So good!! I tossed the kale in oil first and laid them out on the plate. I then added salt, garlic powder, and red pepper flakes! 10 times better than store bought!
Really great recipe but my kale chips caught on fire in the microwave.
I only had spray-on canola oil in the kitchen, so I used that without the salt. I had to microwave it 1:11 longer than the recipe called for, but it turned out pretty good! I suspect olive oil would be tastier, but I don’t think salt is needed.
So easy! I massaged a small amount of oil (I don’t have a mister) and salt into my kale the way I usually do before making a salad or stir fry – the leaves get soft and silky. I then spread out on wax paper on the glass microwave plate. One bunch kale from my garden made two batches. One batch took 3 1/2 minutes to get nice a crispy. I just opened the microwave door and closed it again every 30-60seconds to prevent any potential fires.
I sprayed avocado oil to coat the kale. My microwave is really strong at 1200 watts so I cooked it on power level 1 in 15-30 second intervals for 2 to 2 1/2 minutes on a plate. It came out great. Cooking time depends on how large your pieces are. Finished with sea salt.
Stupid good. Stupid easy. In the middle of making several plates full in the microwave my boyfriend came into the kitchen, became intrigued, started man-splaining and commandeered the project. He overloaded the plate. It just took longer to crisp. Also I had no olive oil available so I used grape seed oil. Delicious. I’m going to try with flavored oil next time. Calling it a home run. Quick and easy when you only want to make a little!
I was blown away that the microwave actually worked! These were awesome and so much faster. I had some kale that was about to go bad, and a little limp. I tossed it in a bowl with EVOO and garlic salt to make sure each leaf was evenly coated. I cooked them exactly 2 minutes in my microwave, and they were perfect. No burnt edges like the oven. Five +++ stars!
It lit my microwave on fire, I think it was because I added too much oil but they still came out fine.
@janeyann99> I agree with you completely. Misting them keeps the chips from going limp. The driver they are going in the crisper they are coming out. The oil really only helps the salt stick and creates a bit of humidity to keep them from curling up to much. Parchment paper is key to keep them from sticking. Well done girl! For those of you who like a little heat, a dash or two of sriracha powder or any other spice you prefer never hurts either. I dont recommend using garlic powder tho. I found it to go bitter due to the long cooking time. And I agree ,it takes at least 4 mins on high to get a real good crisp out of them. I usually set mine for 5 mins. Make sure your pieces are dry on both sides before preparing. Enjoy the goodness!
I made one batch. Some turned out ok, but it wasn’t crispy like baked ones usually are. It was fine I liked them I will use this method during the summer if I don’t want to turn on the oven
Quick and good. Instead of doing the whole bunch, I just do little batches as needed.

Tasty but BEWARE! After 35secs in the microwave a piece of kale caught fire! But… It was so yummy I made a second round so it was worth the risk

We do not like kale but my husband and I inhaled these. Next time I will experiment by adding some interesting seasonings.
I made this for the first time. Thought it would be horrible ( the way we think all healthy food should taste!). Will absolutely make it again. I’m making a batch in the oven to see the difference between the two methods. I’ve seen comments of kale bursting into flames in the microwave, so I adjusted my power setting to cook on 40% for 2 minutes.
