Kale, Avocado, and Black Bean Salad

I created this Alfredo chicken recipe using items I already had on hand, and it quickly became a household favorite! It still has a fantastic flavor even whether made with low-sodium, fat-free, or reduced-fat components.

Ingredients

  1. 3 tablespoons olive oil
  2. 3 tablespoons lime juice
  3. 1 tablespoon minced jalapeno pepper (seeds and membranes removed)
  4. 1 teaspoon honey
  5. ½ teaspoon ground cumin
  6. ¼ teaspoon ground coriander
  7. sea salt to taste
  8. 1 large bunch kale, ribs removed and leaves thinly sliced
  9. 1 (14 ounce) can black beans, rinsed and drained
  10. 1 avocado, diced
  11. ½ cup crumbled feta cheese
  12. ⅓ cup pecans
  13. 1 teaspoon white sugar
  14. ⅛ teaspoon salt
  15. ½ cup chopped fresh cilantro leaves

Instructions

  1. Whisk olive oil, lime juice, jalapeno pepper, honey, cumin, coriander, and sea salt together in a bowl until dressing is smooth.
  2. Place kale in a bowl and sprinkle sea salt over kale. Massage salt into the kale until leaves are darker in color and fragrant. Drizzle enough dressing over kale to lightly coat. Gently fold in black beans, avocado, and feta cheese.
  3. Place pecans into a skillet and sprinkle sugar and 1/8 teaspoon salt over pecans; cook and stir over medium-low heat until fragrant and sugar is dissolved, 3 to 5 minutes. Cool pecans and chop.
  4. Distribute salad among serving bowls and top with toasted pecans and cilantro.
  5. I like to add the sugar and salt to the pecans while toasting, but if you want to make it even healthier you can toast them dry.

Made this as directed and it turned out great!! I love the dressing and the candies pecans – those are things I may even incorporate into other recipes. Next time I may use fewer black beans and maybe add something with some bite like green onions.

Wait! Before you think, oh KALE no, hear me out. I’m not a big fan of kale either but let me tell you, this one works. If you still want to pass on the kale use something like romaine because this dressing is great. C’mon I dare you to try the kale and dressing, it is really good.
