I normally prepare this delectable apple cheesecake in the autumn.

Ingredients

  1. 2 pounds lean ground beef
  2. 2 tablespoons olive oil
  3. 1 green bell pepper, diced
  4. 6 cloves garlic, minced
  5. 3 tablespoons ground cumin
  6. 1 tablespoon chili powder, or more to taste
  7. salt and ground black pepper to taste
  8. 1 (28 ounce) can diced tomatoes
  9. 4 cups water

Instructions

  1. Heat a large skillet over medium heat and add ground beef; cook and stir until meat is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
  2. Heat olive oil in a soup pot over medium-high heat. Cook and stir green pepper in the hot oil until it starts to soften, 5 to 7 minutes. Reduce heat to low, stir in garlic, cumin, and chili powder, and season with salt and black pepper to taste.
  3. Mix cooked ground beef and tomatoes into green bell pepper mixture, breaking up tomatoes with a spatula. Add 4 cups of water or enough to cover the ingredients, reduce heat to low, and simmer at least 2 hours to blend flavors.

I thought it was delicious; I omitted the green peppers since, it isn’t one of my families favorites…YES, the cumin and chili powder are reversed (easy fix) I always use more chili powder than whats called for. The recipe openly suggests to use whatever ingredients you may like; I did just that, I used kidney beans, black beans, Mexican corn, I cooked an onion in with the ground beef. Last but not least, a big squeeze of tomato paste from the tube…..: )

WHOA – before you make this – I think that the amount of cumin and chili powder is reversed. (I think it should be 3 T Chili Powder & 1 T Cumin) Besides that I think that this recipe needs onions -the bell pepper didn’t seem to fit quite right especially without the onion. I hope the submitter steps in and if the recipe is incorrect asks AR to correct it. In the meantime – beware and make the corrections yourself. *** UPDATE – there is no way you will need 4 cups of water unless you plan to cook this down all day or want Chili Soup.
