Jo’s Hawaiian Chicken Burgers

I came up with this burger since I was in the mood for a juicy, flavorful burger. When the kids are not joining us for dinner, I would like to mince the jalapenos and add them to the ground chicken patties.

Ingredients

  1. 1 teaspoon olive oil
  2. ⅓ cup diced red onion
  3. 2 teaspoons minced garlic
  4. 1 teaspoon minced fresh ginger
  5. 1 pound ground chicken
  6. ¾ cup panko bread crumbs
  7. 2 tablespoons teriyaki sauce
  8. salt and ground black pepper to taste
  9. 4 pineapple rings
  10. 4 slices provolone cheese
  11. 4 hamburger buns, split
  12. 2 tablespoons light mayonnaise, or to taste
  13. 8 canned jalapeno pepper slices, or to taste (Optional)

Instructions

  1. Heat oil in a small skillet over medium heat. Add red onion, garlic, and ginger; saute until onion has softened and turned translucent, about 5 minutes. Set aside to cool.
  2. Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  3. Combine chicken, panko, teriyaki sauce, salt, and pepper in a large bowl. Add cooled onion and mix gently with your hands until fully incorporated. Create 4 burger patties.
  4. Grill burgers on the preheated grill until cooked through, 5 to 6 minutes per side, adding provolone slices towards the end of the cooking time so they can melt. An instant-read thermometer inserted into the center of the burgers should read at least 165 degrees F (74 degrees C). Grill pineapple slices alongside the burgers until warm, about 1 minute per side.
  5. While the burgers are cooking, prepare hamburger buns with a light smear of mayonnaise. Place cooked burgers on buns and top with pineapple slices and jalapeno peppers.
  6. You can cook the burgers on an indoor grill pan on the stovetop, if desired.
  7. Hawaiian buns may be nice.

I really enjoyed these burgers a lot! The fruitiness of the pineapple, the heat of the jalapeno, the creaminess of the cheese, and the hit of ginger you get from the burgers themselves, all come together in a perfect flavor harmony. I did find that the burger patties didn’t have a very strong flavor when eaten alone, however. I felt the could have used more seasoning, maybe more teriyaki sauce, and since I used about 2 tsps of minced ginger, I’d say more ginger as well. I also topped the burger with lettuce, tomato, and extra sauteed onion–and would do so again. Overall, a great variation on the classic burger, and definitely worth making again! (Note: I used ground dark chicken meat, and that made the burgers stay nice and juicy!)
