This is a traditional Victorian recipe made to use up any remaining tinned fruit in the pantry. Christmastime is a beautiful time of year, and it makes wonderful gifts. Frost with cream cheese frosting or lemon glaze, if preferred.

Ingredients

- 1 (16 ounce) package Regular Flavor Jimmy Dean Pork Sausage
- 10 large eggs, lightly beaten
- 3 cups milk
- 2 teaspoons dry mustard
- 1 teaspoon salt
- 6 cups cubed bread
- 2 cups shredded sharp Cheddar cheese
- 1 medium tomato, seeded and chopped
- ½ cup sliced mushrooms
- ½ cup thin-sliced green onion
- ½ teaspoon black pepper
Instructions
- Preheat the oven to 325 degrees F (165 degrees C). Grease a 9×13-inch baking dish with cooking spray.
- Cook sausage in a large skillet over medium-high heat, stirring frequently, until thoroughly cooked and no longer pink, 8 to 10 minutes. Remove from heat.

- Combine eggs, milk, dry mustard, and salt in a large bowl; stir well.

- Distribute 1/2 of the bread evenly into the prepared dish. Sprinkle with 1/2 of the sausage, 1/2 of the cheese, 1/2 of the tomato, 1/2 of the mushroom, 1/2 of the green onion, and 1/2 of the black pepper. Repeat layers one more time. Pour egg mixture evenly over casserole.

- Bake uncovered until eggs are set, 55 to 60 minutes. Tent with foil if the top begins to brown too quickly.

- Time-saving tip: One 9.6-ounce package of fully cooked Jimmy Dean Hearty Sausage Crumbles may be substituted for one 16-ounce package of fresh breakfast sausage in most dishes.

I make this all the time & my family loves it! We leave out the veggies & use just the 3 main ingredients. It’s our “go to” for lazy weekends & for those days after late night getogethers, such as New Year’s Day. Highly recommend!
I use this recipe as base. Usually for a “clean out the fridge “ casserole . Great to have on hand for weekday quick snacks, meals. Microwaves well. It’s the best breakfast casserole I’ve ever made. The secret is to use approx 10 slices of bread . Cut them – then tear them smaller . Also, use the hand mixer for the eggs and milk ( or half and half ) so that it’s more easily absorbed by the bread , while you let it set OVERNIGHT in the fridge. DO NOT OVERCOOK . Mine took maybe 30 mins . WATCH IT and you’ll have a dense , but light custardy egg bake. Turkey bacon also holds up well to this recipe. This last time I used that, sautéed crimini w/ onion, threw in spinach, and for cheese I tore up pepper Jack slices . The layering can be random but put most of the bread in the bottom . With tge layering competed , make sure all of the bread is pressed into the egg mixture and refrigerate. YUMMY!!!!
I’ve made this recipe every single year on Christmas morning (and my mother did when I was young). It’s a family favorite and special tradition. I make it according to the recipe, but also add white onions. I omit the optional mushrooms and tomatoes. I recommend using a firmer bread; my choice being sourdough, but French bread is good too.
We’ve made this recipe for Christmas Eve breakfast for years. Everyone loves it. We use hot sausage and grands biscuits as the bread. We don’t add any extras. I make it the night before and wake up early to pop it in the oven. There’s no way my family would be okay with skipping this.
I’m giving it a 5 because it was very tasty as is. I made no adjustments and everyone ate every bit of it! I made it again because I like to meal prep and this time made it with shredded hashbrowns. It was still a very good recipe. Next time I will add two more eggs. But the recipe on its own is really good and you have to let it cook because the center takes a really long time to cook.
It’s wonderful and most of the ladies in our group wanted the recipe.
I made this exactly as written and opted to add in tomatoes and green onions. Really tasty and easy to make. I will make again! Some reported soggy bread, took too long to cook, etc. I did not experience this but I did use good quality bread with some density to it, not regular sandwich bread. That may make a difference.

LOVED IT!! I added 1 medium sweet/Vidalia onion, finely shredded. Also, 1/2 lb of bacon with the sausage. I’ve done this with both sour dough and Italian breads.
Good recipe, I used 1lbs of sausage with a smoked sausage cut into pieces with a can of rotel. Turned out great.

Great! Easy recipe and very tasty. I halved the recipe for two people and still had plenty left for the next day. I’m not real found of the texture of mushrooms so I chopped them a little finer and I added 1/2 of a 4 oz can of chopped mild green chilies for added flavor. For making half of the recipe place in 8”x8” buttered glass pan and bake at 325 degrees for 25-30 minutes. Enjoy!
I’ve made this twice now and followed directions to a T. Came out wonderful. I fried a small onion with the sausage the 2nd time and added 1/2 cp chpd grn pepper. I am making this again on a cold Sun morn, substituting ham. Best recipe ever and so versatile! It keeps well throughout the wk as well. Thank you for posting.

Best dish ever. I added provolone, Italian, and sharp cheddar cheese, mushrooms, red and yellow peppers. My children did not even notice the extra vegetables. They all loved this dish.
