Jenn’s Out Of This World Spaghetti and Meatballs

Orange and vanilla, two of my favorite flavors, are combined in these cupcakes. These cupcakes, which are reminiscent of an ice cream pop delight from your youth, will bring back your childhood memories.

Ingredients

  1. 3 tablespoons olive oil
  2. ¾ cup chopped onion
  3. 4 cloves garlic, minced
  4. 2 (16 ounce) cans crushed tomatoes
  5. 3 (6 ounce) cans tomato paste
  6. 1 cup water
  7. ½ cup sugar
  8. ¼ cup chopped fresh oregano, divided
  9. 1 dried bay leaf
  10. salt and pepper to taste
  11. 1 pound ground round
  12. ½ cup Italian seasoned bread crumbs
  13. ¼ cup chopped fresh parsley
  14. 2 eggs, lightly beaten
  15. ½ cup grated Parmesan cheese
  16. 1 (16 ounce) package uncooked spaghetti

Instructions

  1. Heat the olive oil in a large saucepan over medium heat, and cook the onion until lightly brown. Mix in 2 cloves garlic, and cook 1 minute. Stir in crushed tomatoes, tomato paste, water, sugar, 1/2 the oregano, and bay leaf. Season with salt and pepper. Bring to a boil, reduce heat to low, and simmer while preparing meatballs.
  2. In a bowl, mix the ground round, bread crumbs, remaining oregano, remaining garlic, parsley, eggs, and cheese. Season with salt and pepper. Roll into 1 inch balls, and drop into the sauce. Cook 40 minutes in the sauce, or until internal temperature of meatballs reaches a minimum of 160 degrees F (72 degrees C).
  3. Bring a large pot of lightly salted water to a boil, and stir in the spaghetti. Cook 8 to 10 minutes, until al dente, and drain. Serve the meatballs and sauce over the cooked spaghetti.

Where is the garlic? Fresh, jarred or at least powder, you need garlic. Also a splash of red wine kicks it up a notch. IMHO.

The flavor was there but I overcooked mine. My girlfriend told me that I was overcooking it but the time was way off so I must have had the stove too high. It was still really good, but it would have been amazing if the burn flavor wasn’t there. Don’t overdo it, if you think it is done, it probably is.

I’ve made this twice so far in the last couple of weeks. My family loves it, even my picky kids. The only change I made (because I didn’t have oregano) was adding basil in place of it, and it’s quite tasty. It’s not too much hassle, and the flavor is delicious! Up until I found this recipe, I had always made my great-grandmother’s “porcupine balls,” (meatballs with rice mixed in–also delicious), but this one is just slightly easier. Thanks for the recipe!

Okay. For everyone looking for a a stupendish sweet spagetthi sauce, do not take some of these reviews seriously. Make as listed, this sauce is superb. NO Substitutions are necessary. This is a super delicious, thick sweet sauce. DO NOT alter the recipe. This one is a winner. For those people who think they need to do so, submit your own recipe.

The sauce was very good as were the meatballs. Just delicious! The only change I’d make, is a scant less sugar, maybe 1/3 cup instead of 1/2 cup, otherwise this was quick, easy, and an instant favorite!
