James’ Fire Salad

Serve this tasty, spicy salad with a caution and perhaps a glass of milk. an excellent side dish with Mexican or grilled food.

Ingredients

  1. 1 head red leaf lettuce – rinsed, dried and torn
  2. 4 fresh jalapeno peppers, seeded and sliced into rings
  3. 3 medium ripe tomatoes, chopped
  4. 1 Anaheim pepper, seeded and diced
  5. ½ red onion, sliced and separated into rings
  6. ¼ cup chopped fresh cilantro

Instructions

  1. In a large salad bowl, toss lettuce with jalapeno peppers, tomatoes, Anaheim pepper, red onion, and cilantro. Serve.

This was not terrible, not great. Decent flavor. I was looking forward to something a little more spicy. Without the seeds, the jalapenos were not hot at all. And since the Anaheim is never hot, it wasn’t too spicy. The cilantro gave it the most flavor in my opinion. Served with a Southwestern dressing.

This is a great side to have with a Mexican dinner– it lightens up all the meat, rice, & beans. I put a little Thousand Island dressing on it…spicy and delicious!
