Ingredients

  1. 2 pounds deli potato salad
  2. 2 tablespoons diced jalapenos (recommended: La Victoria)
  3. 1 teaspoon Mexican seasoning
  4. 6 dashes chipotle pepper sauce (recommended: Tabasco)
  5. 1 scallion, chopped
  6. 1 tablespoon finely chopped fresh cilantro leaves

Instructions

  1. In a large mixing bowl, combine all ingredients. Cover and refrigerate 1 hour for flavors to meld. Serve chilled.

I must admit, this isn’t the best potato salad ever, but it’s still good. The first time I made it, my husband said it’d be better without the jalepenos. So the next time I omitted them. He loves it, but I could do without the extra ingredients and just eat the store bought version by itself. Admittedly, though, it has turned me on to trying out added ingredients to potato salad!

I didn’t use pre-made potato salad, but I appreciated the additions Sandra suggested. We also put in some crumbled bacon, and everyone at our cookout loved it! We’ll definitely make this every time.

This is my favorite potato salad recipe. If you use a store-bought potato salad (which is the idea, given that the show is called SEMI- homemade) you have to make sure that you start off with a good one. I love the combination of the flavors, and anything with cilantro is great in my book. I can’t wait to make this again!

I made my own potato salad and I don’t like actual jalape?os so I just used the juice from the can. It wasn’t as spicy as I thought it would be and a good potato salad.

I fixed this last night for my family and we thought it was great. I bought the “Amish” pre packaged potato salad, which was quite sweet. I added about a teaspoon of cayenne pepper to it….the sweet and spicy were a perfect combo.

It had so little flavor that i ended up doctoring it up with a bunch of stuff from my refrigerator. Don’t expect big flavor from this one.
