Jackfruit Tacos with Mango Slaw

These tacos made with jackfruit are the ideal modernization of the classic. Finished off with a jalapeo-mango slaw on top and taco seasoning for flavor.

Ingredients

  1. ½ cup finely shredded green cabbage
  2. ¼ cup finely shredded red cabbage
  3. ¼ cup chopped fresh mango
  4. 1 medium carrot, shredded
  5. 1 medium jalapeño pepper, seeded and thinly sliced
  6. 1 ½ tablespoons mayonnaise
  7. ½ medium lime, juiced
  8. 1 (14 ounce) can green jackfruit in brine, drained
  9. 1 tablespoon grapeseed oil
  10. ¼ teaspoon taco seasoning, or to taste
  11. 3 (6 inch) corn tortillas, or more to taste
  12. 1 tablespoon chopped fresh cilantro, or to taste (Optional)

Instructions

  1. Combine green and red cabbage, mango, carrot, jalapeño, mayonnaise, and lime juice for slaw in a large mixing bowl. Mix well until all ingredients are coated with mayonnaise; set aside.
  2. Prepare tacos: Gently pull jackfruit flesh apart as you would for pulled pork or chicken, discarding any seeds or pods.
  3. Heat oil in a cast iron skillet over medium heat. Add shredded jackfruit and taco seasoning; cook and stir until heated through and blended with seasoning, 2 to 3 minutes.
  4. Meanwhile, heat another cast iron skillet over medium-high heat. Working in batches, add tortillas and heat for 15 to 30 seconds per side.
  5. Put jackfruit mixture in the middle of each tortilla and top with slaw and cilantro.
