Italian Wedding Soup

Ingredients

  1. 1 tablespoon extra-virgin olive oil
  2. 1 small onion, finely chopped
  3. 3 carrots, finely chopped
  4. 2 cloves garlic, finely chopped
  5. 2 teaspoons Worcestershire sauce
  6. 2 teaspoons chopped fresh sage
  7. 3 cups fat-free low-sodium chicken broth
  8. 1 parmesan cheese rind, plus 1 tablespoon grated parmesan, plus more for topping
  9. 1/2 pound ground pork
  10. 3 tablespoons breadcrumbs (preferably panko)
  11. 3/4 cup orzo
  12. 8 ounces baby spinach (about 8 cups)

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the onion and carrots and cook, stirring, until slightly softened, about 4 minutes. Add half of the garlic and 1 teaspoon each Worcestershire sauce and sage; cook 1 minute. Add the chicken broth, 3 cups water and the parmesan rind and bring to a boil. Cover, reduce the heat to medium and simmer until the vegetables are tender, about 7 minutes.
  2. Meanwhile, mix the pork, breadcrumbs, 1 tablespoon grated parmesan, the remaining garlic and the remaining 1 teaspoon each Worcestershire sauce and sage in a bowl. Form into 1-inch meatballs.
  3. Increase the heat to medium high and bring the soup to a boil. Stir in the orzo and cook 6 minutes. Add the meatballs and cook until they are firm and float to the top, about 4 more minutes. Stir in the spinach and cook until wilted, about 1 more minute. Ladle the soup into bowls and top with parmesan.

Great soup! As others have said, I would reduce the amount of water added and swap it out for more chicken broth.

So good ! Both creamy and filling. I did use closer to 1 lb of meat in order to have it be more filling. I also winged it with the spinach amount and used what orzo but overall really good. It is a good weekday recipe when in a rush

It came out really good. Even my cantankerous father liked it. My biggest complaint is that it takes way longer to prep than 20 minutes. Next time I think I’d switch out the orzo for some other kind of pasta. Personal preference. It started kind of bland but if you’re worth your weight you can doctor up the seasonings.

4 stars as written, 5 after I used all chicken stock instead of half water, breakfast sausage seasoned with salt, pepper, and dried sage, and added celery and extra seasonings to the soup. I didn’t have a parmesan rind, but the parmesan in the meatballs and served on top of the soup were delicious!

DELICIOUS…..The BEST Italian wedding soup I’ve ever tasted..I would not change a thing!!

I just added a lot of fresh ground pepper and a little more than a pinch of kosher salt to the pot. Even passed this recipe along to my friends and family

It was fairly easy to make and the husband liked it. The amount of savory ingredients were fine however it could use some zing. I just read Shelltel’s suggestions and may try that next time.
ONE NOTE: Directions call for water but it’s not noted in the ingredients list. Can someone please fix this oversight?
