I devised my own oyster stuffing because I could never find the perfect recipe, using bacon, onion, mushrooms, and oysters. It pairs wonderfully with grilled turkey.

Ingredients
- 1 (12 inch) individual ready made pizza crusts
- 1 tablespoon olive oil
- 1 cup pizza sauce
- 1 clove garlic, minced
- 5 leaves escarole, rinsed and dried
- 2 cups shredded mozzarella cheese
- salt and pepper to taste
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Lightly brush pizza crust with olive oil. Spread with a thin layer of pizza sauce, and sprinkle with minced garlic. Remove thick stems from escarole, and arrange leaves over pizza. Cover with shredded mozzarella.
- Bake in preheated oven for 30 to 35 minutes, or until cheese is bubbly.
- Add any additional pizza toppings you like.

Simple and tasty! The footnotes mention to add any additional toppings you like. I added olives and mushrooms for me and because I was feeding my meat loving husband, I added Italian sausage for him. I used escarole and also another lettuce I have growing in my Aero Garden. This came together in a flash and it is one I will definitely make again.
