We always serve this delectable cucumber salad with sour cream at Thanksgiving, but it also makes a fantastic salad in the summer. It’s expected that the mixture will be soupy.

Ingredients

  1. 1 tablespoon olive oil
  2. 4 skinless, boneless chicken breast halves, cubed
  3. 2 cloves garlic, chopped, or to taste
  4. ½ cup red cooking wine
  5. 1 (28 ounce) can Italian-style diced tomatoes
  6. 8 ounces small seashell pasta
  7. 5 ounces fresh spinach, chopped
  8. 1 cup shredded mozzarella cheese

Instructions

  1. Heat olive oil in a large skillet with a lid over medium heat; cook and stir the chicken and garlic until the chicken is no longer pink in the center, 5 to 8 minutes.
  2. Pour wine and diced tomatoes with their juice into the skillet, and bring to a boil over high heat while scraping any browned bits of food off of the bottom of the pan with a wooden spoon.
  3. Stir in shell pasta and return to a boil. Cook uncovered, stirring occasionally, until shells have cooked through, but are still firm to the bite, about 10 minutes. Spread spinach over the top of pasta, cover, and simmer until spinach leaves are cooked, about 5 minutes. Sprinkle mozzarella cheese evenly over the skillet; simmer until the cheese has melted and the pasta is bubbling, about 5 minutes.
  4. If you can’t find seasoned tomatoes, you can use plain tomatoes and add a teaspoon of dried Italian seasoning.

This is delicious. I added about 1/2 tsp salt; but, my husband said it needed a little bit more salt. He can add his own.

I made this fairly close to the recipe, I added some salt to the chicken in step 1 and the spinach near the end. Also some Italian seasoning with the tomatoes. It was definitely edible, but pretty bland. My meat and potatoes husband liked it! If I try it again, I will be adding more seasoning to the chicken when I brown it and hot pepper flakes with more Italian seasoning with the tomatoes & wine. Probably some balsamic vinegar, too.

I liked it – but made a few changes 1/2 c. white wine instead of red cooking wine Frozen spinach instead of fresh 14 oz can petite diced tomatoes + 1 fresh tomato chopped Added basil, oregano, salt, onion powder Also cooked the pasta separately as several mentioned. I’ll make this again, for sure.

Took the advice to pre-cook the pasta and finish in the skillet and that was the right thing to do. It didn’t soak up all the juice in the skillet. Listened to the review of it being bland and added garlic, a bit of jalapeño pepper and salt. We loved it and it’s nice to just use one pan for the whole meal.

Liked the base recipe but changed chicken to ground turkey meat and used GF Penne Pasta. Also added some more seasoning (italian ) and crushed red pepper. Followed the remainder of directions and it was delicious!!! My family loved it. Next time i will do with the chicken.

Great idea! I love one pot dinners. I used a lid when cooking the pasta and still had to add some stock. Not complaining! 2nd time to make this I used 1/2 lb. hot Italian and 1/2 lb. sweet Italian sausage, crumbled and cooked. Was excellent! Wonderful recipe and very adaptable. Thanks for sharing!

Really good, but I found it necessary to add chicken broth in order to have enough liquid to cook the pasta. Also, instead of mozzarella, I used goat chees and it was a complete GAME CHANGER! Dollops of goat cheese on top of each serving, Total YUM!

I have been making this recipe for years! The only change I made was to add a can of rinsed black beans, and cheddar cheese (because it was all I had). I also seasoned with salt and pepper during each step. I love making a one dish dinner, and this is a good one!

I’ve made this several times. I’m single but it makes for leftovers for the week. This would also feed a family quickly and easily. I add sliced mushrooms halfway through the noodles cooking and sprinkle with crushed red pepper when serving.

As is my family thought this dish was really good, but with some modifications it could be better. We felt that adding red pepper flakes, mushrooms and some onion would make this dish like excellent. We always like to try the recipe as is first though.

Great recipe to adjust to your personal taste. I added 1 teas. ground red pepper, and 1 teas. Italian seasoning.I also added chopped pepperoni to add a zing because the chicken is bland, but I added to much. And now it’s not as healthy and it’s a bit too spicey. Still like it. I will definitely make this again without pepperoni addition and maybe some other type of protein.

I made this and thoroughly enjoyed it. If I could change something it would be to add squash and zucchini to it. (I didn’t do it this time). instead of using Italian seasoned tomatoes I used fire roasted tomatoes. would recommend it to someone in a hurry and don’t want to do a lot of dishes.

The family loved it. Lots of flavor, quick and easy to make, and not a lot of dishes to clean. I used one can of diced Italian style tomatoes and one can of fire roasted tomatoes to give it a little extra flavor. We will definitely be making this again.

Delicious, I previously cooked this exactly as the recipe called. This time I added a 10 ounce can of Rotel mild diced tomatoes and green chilies. It adds a bit of spice, and partially cooked the penne pasta. My husband loved this version. Delicious.
