Ingredients
- 4 English cucumbers, diced
- 4 Roma (plum) tomatoes, seeded and diced
- ½ purple onion, diced
- 1 red bell pepper, seeded and diced
- 2 tablespoons chopped garlic
- 1 cup chopped fresh parsley
- 3 tablespoons chopped fresh mint
- ½ cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon kosher salt
- 1 tablespoon ground black pepper
Instructions
- Toss cucumbers, tomatoes, onion, bell pepper, garlic, parsley, and mint together in a bowl. Drizzle olive oil and lemon juice over the salad and toss to coat; season with salt and pepper.

I only used 1 english cucumber but think could have used 2. It was delicious and a few wanted the recipe which I sent to them. Most said it was cool and refreshing. I agree!!
It was very easy to make, i did used freeze dried mint, and cherry or grape tomatoes, going to make it again soon,

Just delicious! We don’t like bell peppers so substituted whatever pepper was ready from the garden.
The only thing that I’d recommend is to 1/2 the dressing. It seemed to be more like soup.
Super yummy – made as written with the exception of the amount of tomato and cucumber – using veggies from the garden so I used 4 cups cubed cucumbers and 4 cups of whole cherry tomatoes… actually can’t wait to make another batch!
I just made this recipe and it is absolutely delicious and full of flavor. The only change I made was that I used 1/4 cup oil and half the recommended amount of salt. I’ll be making this again.
Followed the recipe Didn’t like the dressing. It tasted bitter. I have made a similar salad for years, wanted to try a new version. DH didn’t like it, I didn’t like it.
Excellent! I left out the bell pepper (can’t digest it anymore) and used heirloom tomato–tomato and cucumber were about equal quantity. Better as it sits and creates more juice.
It is so flavorful! We eat it with the Spiced Ground Lamb recipe or Chicken Schwarma and some tatziki sauce. I omit the mint but that’s just our family’s preference.
I used some small tomatoes and a cucumber from my garden, along with a nice red poblano pepper (seeded) instead of the bell pepper, because it was ready and waiting form the garden. Tastes nice, clean, and fresh, if a bit mild. Hoping to try again when my heirlooms are ready.
Made with fresh mint and parsley from the garden. My only regret was that the tomatoes are not quite grown yet… Whole family devoured it, even tipping the bowls to get the last bit of juice. Added a bit of sumac powder to give a Lebanese twist, as per the fatoush suggestion of another reviewer.
Served as a side at our holiday bbq. Made more than enough. Very refreshing on hot day! I wish i had made it a few hours ahead or the night before, to give the flavors a chance to strengthen.

Very tasty! I love cucumber salad and thought with was right on par. My one recommendation is to use curly parsley, specifically. I used Italian flat leaf (that’s what I had already) and I think it was missing that more-herby taste that comes with it. Very good though and I didn’t think there was too much liquid as the lots of olive oil is one of the tasty parts!

I liked this salad. It tastes especially good after marinating in the refrigerator for a couple of hours. It is a bit salty so I reduced the amount I add.
I followed the recipe close BUT ground fresh ginger, used two cucumbers, fresh parsley and sweet peppers. Wow! Love this recipe.
I added just a pinch of sugar. This salad is so refreshing! Quick and easy! The mint makes it!
Made as written with the addition of red pepper as well as the green peppers called for and had some roasted garlic that I added. Outstanding! My mom made something similar when I was growing up. Perfect spring / summer salad. Plus I like it better the next ay after the flavors have had a chance to mingle. A great way to enjoy home grown tomatoes too. Enjoy!
