Island Ahi Burgers with Cilantro-Chile-Lime Sauce

Ingredients

  1. 2 Anaheim chile peppers
  2. 1/2 cup mayonnaise
  3. 3 tablespoons sour cream
  4. 3 tablespoons finely chopped cilantro leaves
  5. 1 tablespoon fresh lime juice
  6. 2 teaspoons minced fresh ginger
  7. 1 teaspoon minced garlic
  8. 1/4 teaspoon salt
  9. 1 egg
  10. 1/2 cup panko (Japanese bread crumbs)
  11. 4 teaspoons soy sauce
  12. 4 teaspoons sugar
  13. 1 tablespoon sesame oil
  14. 1 tablespoon minced fresh ginger
  15. 1 tablespoon minced garlic
  16. 2 teaspoons fresh lime juice
  17. 1 teaspoon grated lime zest
  18. 1/2 teaspoon crushed red pepper flakes
  19. 1/2 teaspoon salt
  20. 1 1/2 pounds ahi tuna fillets, finely chopped
  21. 1 tablespoon vegetable oil
  22. 4 seeded Kaiser rolls, split
  23. 1 large Maui onion (or other sweet onion), thinly sliced
  24. 1 large vine-ripened tomato, sliced
  25. 1 package radish or sunflower sprouts

Instructions

  1. Sauce: Char peppers over gas flame or under broiler until blistered on all sides. Enclose in a paper bag and let stand 15 minutes. Peel peppers, remove stem and seeds, and dice. Measure 1/4 cup diced peppers into a small bowl and add mayonnaise, sour cream, cilantro, lime juice, ginger, garlic, and salt; stir well.
  2. Burgers: Meanwhile, in large bowl, beat egg and stir in panko, soy sauce, sugar, sesame oil, ginger, garlic, lime juice and zest, red pepper flakes, and salt. Add ahi and combine gently; form 4 patties.
  3. Heat vegetable oil on nonstick griddle over medium-high heat. Add patties and cook 3 to 4 minutes per side. Toast rolls under broiler during last few minutes of cooking. Spread sauce on roll bottom and top with onion, tomato, sprouts, and additional sauce. Add roll tops and devour.

thanks for this wonderful aku burger,any time i see shoyu,ginger & garlic i know it’s the bum.maybe that’s why we are not to momona.it’s a blessing to see a person from hawaii entering in this competition,so for all of you who don’t like it maybe you should keep eating your greasy burger’s.just remember to make your word’s sweet for tomorrow you might have to eat it.

I hate eating fish but I love this recipe! The tuna is ground and mixed and seasoned so well with the garlic and ginger and soy sauce you don’t even know you’re eating fish!

The sauce is amazing! It doesn’t feel heavy and it compliments the patty so well too! This is definitely a burger I’d buy in a restaurant. My husband and friend loved it!

Well I finally got around to trying your burger Krystine, and it is divine.I don’t even like fish burgers, but I love this one! No one likes losing, especially by 1 point, but I couldn’t have lost to a nicer person, and a great burger! Hope we get to see each other again one day soon!

I followed this recipe and while i liked it i wasnt thrilled. Its a good seafood burger when beef is too heavy. And chanel…dont say you respect other peoples opinions because you dont or you wouldnt have made the comments you did. Just eat your burger.

I respect all peoples opinions. I respect yours BUT you must be a relative or something. This burger (while I agree…it didn’t beat out in taste the Jewel Burger–LOVED IT!!)–it waaayyy deserves more than a ‘jealous’ 1 star rating.

Usually, I avoid recipes based on Hawaiian cuisine because it utilizes a lot of coconut and pineapple. Thank goodness she used neither because although you can always omit or substitute…some ingredients are just needed to make them work. I like to keep those ingredients—in my Pina’ Coladas only. I did however, decrease my sugar to that of 2 tsp. and used regular bread crumbs that I dried out in the oven. Adding 1-2 tablespoons of applejuice, I found no difference in texture or lost of moisture. I just feel ‘panko bread crumbs’ are to precious to be mashing into meat. It is meant (to me) for tasty crispy coatings. I served mine to my fiance’ with ‘baked sweet potato fries’. A little much but eh’…I love those. This burger was up there in good taste and texture. Quite filling too! So quit HATIN’ and admit it…YOU LIKE IT TOO!

We made this and followed the recipe to the letter. The lime was overpowering, followed by a sweetness that just wasn’t appetizing for a “burger.” No wonder TGIF decided to make these sliders instead of entrees. The wrong burger won this competition. If you want a non-beef burger, try the Jewels Jasmine Turkey Burger – it’s one of the best I’ve ever had.
