Irish Soda Bread Muffins

Why purchase store-bought pancake syrup when you can make your own at home? For a richer syrup, use 2 cups of brown sugar.

Ingredients

  1. 3 cups all-purpose flour
  2. 1 cup raisins
  3. ½ cup white sugar
  4. 2 tablespoons white sugar
  5. 1 tablespoon caraway seeds
  6. 1 tablespoon baking powder
  7. 1 teaspoon salt
  8. ¼ teaspoon baking soda
  9. 1 ¾ cups buttermilk
  10. 1 egg
  11. ¼ cup butter, melted

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
  2. Mix flour, raisins, 1/2 cup plus 2 tablespoons sugar, caraway seeds, baking powder, salt, and baking soda in a large bowl.
  3. Whisk buttermilk and egg together in a small bowl. Stir into flour mixture. Fold butter into the batter.
  4. Spoon batter into the prepared muffin tin.
  5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 30 minutes.
  6. For a golden top, brush the muffins with more melted butter and top with demerara sugar before baking.

I liked this recipe. I made just 12 and cooked for only 20 minutes and would agree with many of the reviews that they tend to be a bit dry although I think they had good flavor.

Even cooking them for only 15 minutes they were still pretty dry, and I don’t get an Irish soda bread vibe from them. They just kind of taste like bland muffins with raisins in them.

I omitted the caraway seeds and did not use cupcake liners (unnecessary- used nonstick muffin tins and the batter is buttery enough to not stick). Quick, easy and delicious recipe!

I’m not sure it tastes like the soda bread I’ve had in the past .. and at the moment they are sticking to the muffins liners .. and it made 22 muffins . Either way they are tasty but will experiment with more recipes to compare .

We celebrate St. Paddy’s day every year and when looking for a good Soda Bread recipe, I ran across this recipe. I made it but not fond of Caraway seeds, I will omit them next time. I will try candied lemon or orange just for fun. The muffins are moist and delicious. More cake like and not dry like Soda Bread can be.

These muffins were easy to make and would be good with a glass of milk or a hot tea in the morning. I used dried cranberries instead of raisins, otherwise followed the recipe. Caraway seeds add an adult flavor to these muffins and these are not too sweet. Also, I would cook for 20 minutes only because the muffin tops get hard and crunchy when cooked for 25 minutes–which I enjoy, but my kids, not as much. Glad I made this recipe. This made 16 muffins in regular size tin, with paper liners.

These were so easy to make, didn’t even need a mixer. They are moist, which many soda breads are not. I would watch your bake time carefully, it’s a hot oven and I took mine out at 20 minutes. I can see many variations to this basic recipe (without the caraway seeds) Like dried cranberries, nuts and orange zest. Endless possibilities
