Instant Pot® Vegan Steel-Cut Oats with Apple and Cinnamon

The simplest and tastiest dish for a healthy and satisfying breakfast! Before creating another pot of oats, I microwave a serving of 3/4 cup leftover oatmeal every morning for a few days.

Ingredients

  1. 2 cups water
  2. 1 cup almond milk
  3. 1 cup steel-cut oats
  4. 2 tablespoons maple syrup
  5. 2 tablespoons flaxseed meal (Optional)
  6. 1 apple, diced
  7. 1 teaspoon ground cinnamon
  8. 1 tablespoon chopped almonds, or more to taste (Optional)

Instructions

  1. Combine water, almond milk, oats, maple syrup, flax seed meal, apple, cinnamon, and almonds in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 10 minutes. Allow 10 minutes for pressure to build.
  2. Release pressure using the natural-release method according to manufacturer’s instructions, 10 to 15 minutes. Unlock and remove the lid. Stir oatmeal thoroughly and serve immediately.
  3. You can use any non-dairy milk of your choice.
  4. Instead of almonds you can also use chopped pecans, walnuts, or any choice of nuts.
