Instant Pot Sausage and Peppers

I cook this with my husband at least once a week, sometimes more. There are some additional delicious additions on top of the traditional Caprese salad.

Ingredients

  1. 2 tablespoons olive oil
  2. 2 green bell peppers, seeded and cut into strips
  3. 2 red bell peppers, seeded and cut into strips
  4. 1 onion, sliced, separated into rings
  5. 1 (8 ounce) can tomato sauce
  6. 2 cloves garlic
  7. ½ teaspoon Italian seasoning
  8. ½ teaspoon salt
  9. 1 (20 ounce) package turkey Italian sausage links

Instructions

  1. Turn on a multi-functional pressure cooker (such as Instant Pot) and select Saute function. Once pot is hot, add oil, green and red bell peppers, and onion. Cook until vegetables are tender, about 5 minutes. Lightly prick sausage casings with a fork and add to pot. Brown sausages on all sides, about 5 minutes. Add tomato sauce, garlic, Italian seasoning, and salt. Close and lock the lid.
  2. Turn off Saute function and select high pressure according to manufacturer’s instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  3. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Cut sausages on the diagonal into small pieces. Serve immediately.

I thought this was great. I halved the recipe but also added basil as seen in another recipe. I sauteed the sausage first and then dumped it in a bowl while I sauteed the peppers. I ate it on top of rice.

I tweaked it to my Italian taste buds. I used the Hot Sausage and as I usually do with my hot sausages, I cook them in a microwave for 8 minutes to get the fat out. So, there were no problems browning them in the pot. I just browned the onions and peppers and added tomatoes paste as I prefer this to anything else in my sausage dishes. I also added hot pepper. Yummy. And so easy and fast

This is a great recipe! Cooking it made the sausage a little spicy. Instead of the tomatoes and seasoning I used 2/3 of a jar of Tuscan peppers sauce (from ThriveMarket). It was easy and perfect! We served it on sandwich rolls. It was a delicious and hearty meal.

As most other reviewers, veggies need to sauté longer and it’s impossible to brown the sausages with the veggies in the way. I browned them in a frying pan and put them back in the pot for pressure cooking. Overall a good recipe with a couple of tweaks!

Turned out great! Don’t add any extra water right before pressure cooking it as the tomato sauce will be all watery and thin.

My family loved this recipe. Not fans of green peppers so added yellow, red and orange peppers. Also used farmers sausage and it was delicious!

Used chicken sausage. Agree with reviewers that found it hard to brown sausage with veggies. Would remove veggies to brown sausages next time. Deglazed pot with red wine. Served over pasta.

This was beyond excellent! No changes! Used mild Italian turkey links. Agree sautéing veggies took a bit longer. Took veggies out of pot to brown links and put all back in. It was so good, the two of us ate the whole thing and we are not big eaters. Will definitely make again, will be perfect to make for company as well!

Made this with a mix of sweet and hot sausage. Hard to saute all those vegetables in the IP, had to remove them to brown the sausage, then removed them from the pan and deglazed with the tomato sauce so I did not get the “burn” notice. Served on rice, makes plenty of sauce. Next time I will use all hot sausage and add some herbs and spices.
