Instant Pot Sauerkraut Soup with Sausage

Sauerkraut soup with sausage from Emeril Lagasse has long been a favorite of mine. It takes an hour and a half to prepare on the stovetop, despite not being difficult. This is my Instant Pot adaptation. If preferred, serve with crusty bread.

Ingredients

  1. 12 ounces smoked sausage, chopped
  2. 1 large onion, chopped
  3. 2 ribs celery, sliced
  4. 1 tablespoon minced garlic
  5. 3 sprigs fresh thyme, leaves only
  6. ½ teaspoon ground black pepper
  7. 2 (14.5 ounce) cans sauerkraut, drained
  8. 1 pound red potatoes, cubed
  9. 5 cups chicken broth
  10. 6 fluid ounces hard apple cider

Instructions

  1. Turn on a multi-functional pressure cooker (such as Instant Pot) and select Saute function. Add sausage and cook until caramelized and fat is rendered, about 4 minutes. Add onion, celery, garlic, thyme leaves, and pepper. Cook for 3 more minutes. Cancel Saute mode.
  2. Add sauerkraut, potatoes, chicken broth, and hard cider to the pot. Close and lock the lid. Select High pressure according to manufacturer’s instructions; set timer for 8 minutes. Allow 10 minutes for pressure to build.
  3. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes.

My husband and I love it. I added one more potato, sauteed vegetarian bacon (I am vegetarian). After all done I pressed the saute button again and added smoked vegetarian hot dogs. Very yummy. I love Sauerkraut, but never made it like this. Very interesting flavor.

I am a HUGE fan of sauerkraut, and can’t wait to make this. However, I’m wondering what “hard cider” to use. Is this referring to the alcoholic cider, such as Angry Orchard etc. Any advice is greatly appreciated. Thank you!
