Ingredients

  1. 3 pounds sweet potatoes, peeled and chopped into 2-inch pieces
  2. ½ cup full-fat coconut milk
  3. ½ cup vegetable broth
  4. 4 cloves garlic, peeled
  5. 2 tablespoons salted butter
  6. 1 teaspoon sea salt
  7. 1 teaspoon ground black pepper

Instructions

  1. Combine sweet potatoes, coconut milk, vegetable broth, garlic, salt, and pepper in a multi-functional pressure cooker (such as Instant Pot). Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  2. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Carefully remove pot insert and place on a trivet.
  3. Mash sweet potatoes with butter in the pot insert using a potato masher and season with salt and pepper to taste.
  4. Use beef broth instead of vegetable broth and ghee instead of salted butter.
