Instant Pot® Lentil and Ham Soup

When you don’t have entire day, have a hearty and delicious soup. A little over an hour until Yum! I’m grateful to queendiva1 for a fantastic base recipe.

Ingredients

  1. 1 tablespoon olive oil
  2. 1 cup chopped onion
  3. 1 cup chopped celery
  4. 1 cup carrots, 1/4-inch slices
  5. 2 cloves garlic, minced
  6. 1 ½ cups diced cooked ham
  7. 1 cup lentils
  8. ½ teaspoon dried basil leaves
  9. ½ teaspoon dried oregano
  10. ¼ teaspoon dried thyme
  11. 4 cups chicken broth
  12. 1 (8 ounce) can tomato sauce
  13. 1 cup water
  14. 1 small bay leaf
  15. 1 ¼ teaspoons kosher salt
  16. ½ teaspoon lemon juice
  17. ¼ teaspoon ground black pepper

Instructions

  1. Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil and warm for a few minutes. Add onion and celery; saute for 2 minutes. Add carrots; saute for 4 minutes. Add garlic and cook for 2 minutes. Stir in ham, lentils, basil, oregano, and thyme. Add chicken broth, tomato sauce, and water. Stir in bay leaf.
  2. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  3. Release pressure using the natural-release method according to manufacturer’s instructions, 10 to 40 minutes. Remove lid carefully. Discard bay leaf. Stir salt, lemon juice, and pepper into the soup.
  4. You can substitute Himalayan salt for kosher salt if desired.

I made it according to directions without carrots (didn’t have any on hand). I ended up bringing it back up to pressure for a few more minutes to soften the lentils a little more, but other than that it was a perfect meal. I served it with brown rice and leftover cornbread. I cooked it in my IP Mini, and it filled it to the max line (however, it may explain the need for a little longer cook time.).

I love this recipe so much. The first time I made it exactly as written, and it was good. The second and third time I made a few changes, and it was even better. I omitted the water – it didn’t need it. I increased all the seasonings a bit. I put in extra carrots simply because I like them. The best part is that you can work with what meat you have, whether it be ham, ham hocks, some type of sausage, or my personal favorite, smoked turkey thighs! You can use the chicken broth specified in the recipe, but homemade bone broth is great too, or beef broth if you have it. This is a lovely recipe that is easy enough for a child to put together. It is absolutely delicious on a cold night, with leftovers for lunch the next day.

FANTASTIC! Yum! Better than the previous slow cooker recipe I was following. This is a great way to use up left over ham. Very good, even my not healthy Hunny enjoys it. Think a Campbell chunky soup. It’s fantastic the way it is but next time I’ll try adding cubed potatoes and red kidney beans to give it more density.

What a delicious soup! Because I had recently made split pea & ham soup, I decided to go with hot Italian turkey sausage. I browned the sausage with olive oil, then added the onions, carrots and celery and sauté until most of the liquid evaporated, then on with the rest of the recipe as written. Man o’ man, one of the best lentil soups I have ever made! It’s a definite keeper and it will be the only one I will make from now on.

I had everything on hand for this and used up our ham from New Year’s Day. I followed the recipe. I’ll probably use less salt next time, depending on how salty the ham tastes. My family loved this, including my 6-year-old granddaughter. I served it with cornbread. Will definitely make this again!

Excellent recipe. I did not use my IP but made it over the stove (cooking time was not more than 20 min I would say). The soup was flavorful when it was done. After tasting it, I decided to add a half of lemon. Not just the juice but the actual lemon. That boosted the flavors. But it was a 5 before that as well. We will make it again 🙂

I made this recipe and it was delicious! Very easy to make, just add all ingredients into slow cooker and cook on high for 5 hours. The family loved it. I paired it with a salad and BraziBites (Brazilian rolls). Will definitely make it again.
