Breakfast on the fly is made to perfection with these Instant Pot egg cups. They are flavorful and contain spinach, onion, garlic, and cheese.

Ingredients

  1. 12 eggs
  2. 1 teaspoon granulated garlic
  3. 1 ½ teaspoons salt, or to taste
  4. 1 ½ teaspoons ground black pepper, or to taste
  5. 1 cup chopped spinach
  6. ¾ cup shredded Muenster cheese
  7. ½ cup chopped onion

Instructions

  1. Beat eggs in a medium bowl until yellow and frothy. Add garlic, salt, and pepper.
  2. Toss spinach, Muenster cheese, and onion together in a small bowl. Divide evenly among the cavities of a silicone egg mold. Pour beaten eggs into each cavity, filling each 3/4 full. Cover mold with aluminum foil.
  3. Pour 1/2 cup water into a multi-functional pressure cooker, such as Instant Pot. Place egg mold inside. Close and lock the lid, sealing the vent. Select Steam function; set timer for 13 minutes.
  4. Release pressure naturally according to manufacturer’s instructions, 10 to 40 minutes.
  5. Feel free to interchange vegetables for more variety.
  6. This uses a silicone egg mold available through online retailers, such as Amazon.

The egg mixture was too much for the 7 slot circular silicone mold. The spinach was twice as much as needed. Prep time for me was more like an hour than 15 minutes. I suppose with a lot of practice I could get that time down some. I swapped the muenster cheese for laughing cow and dunked chunks in each mold. I’m waiting for them to finish but I don’t know if this is the right recipe for me. ‍♀️

These were good but not the texture or flavor I was looking for. I think we prefer the ones with cottage cheese for the texture factor, these were just a little rubbery for our liking. I did switch out the spinach for chopped ham to make the littles happy.
