Ingredients

  1. 1 cup dry garbanzo beans
  2. 3 cups vegetable broth
  3. ⅓ cup lemon juice
  4. 3 tablespoons tahini
  5. 2 tablespoons olive oil
  6. 2 cloves garlic, chopped
  7. 1 teaspoon ground cumin
  8. ½ teaspoon salt

Instructions

  1. Combine garbanzo beans with vegetable broth in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
  2. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove lid.
  3. Strain garbanzo beans, saving 2/3 cup liquid. Place garbanzo beans in the bowl of a food processor; add lemon juice, tahini, olive oil, and garlic. Blend until smooth and creamy, about 3 minutes. Scrape bowl and add reserved 2/3 cup liquid, cumin, and salt; blend for 1 minute more.

I added a bit more garlic (roasted) and some red pepper flakes because I didn’t have tahini. It came out just fine. Also, doubled everything but the lemon and made a large amount for our family. I didn’t read the final step very well and added all the ingredients together before blending. I don’t think it makes much of a difference except I would slowly add the liquids back so it doesn’t get too thin. It thickens a bit in the refrigerator. This recipe is quick and easy, it’s replaced store bought hummus for me.

Although I used less garlic, this recipe is pretty great. I will definitely use less lemon next time, though. But the method is perfect and so darn easy. There is no beating homemade, warm hummus. Yum. Thank you for the recipe.

The only thing I did wrong was I forgot to save the water so I ended up using just plain filtered water and it still came out amazing cannot wait to make it again the correct way. I made it the correct way and it blew my expectations, now I did make one change the third time I made it and I encourage anyone who loves garlic to try this its sweeter and also makes the garlic more milder, I roasted my garlic first then added it and OMG just so good, was a hit with the family
