Instant Pot Chicken Bone Broth

The richest, most flavorful soup you’ve ever tasted is made by using the carcass of a rotisserie chicken. This also creates a tasty broth for drinking. After making this, you won’t ever buy canned or boxed food again. This can be prepared in a small portion of the time required by a slow cooker with the use of your Instant Pot.

Ingredients

  1. 1 (2 pound) rotisserie chicken carcass
  2. 2 medium carrots, cut into thirds
  3. 2 stalks celery, cut into thirds
  4. 1 medium onion, cut in half
  5. 1 bulb garlic, cut in half
  6. 1 tablespoon apple cider vinegar
  7. 2 teaspoons salt
  8. 1 teaspoon whole black peppercorns
  9. 1 large bay leaf
  10. 10 cups water

Instructions

  1. Set chicken carcass in a multi-functional pressure cooker (such as Instant Pot®). Add carrots, celery, onion, garlic, apple cider vinegar, salt, peppercorns, and bay leaf. Pour in water.
  2. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 180 minutes. Allow 30 minutes for pressure to build.
  3. Release pressure using the natural-release method according to manufacturer’s instructions, about 30 minutes. Unlock and remove the lid. Let broth sit for 20 minutes to cool. Pour liquid through a strainer and discard all solids.
  4. Refrigerate and use within 3 days or store in freezer-safe containers and use within 6 months.
  5. This is the basic recipe I make ahead not knowing what it will be used for. If you’re making it for a specific meal, add whatever herbs you like.

Yes!! I’ve been making this with our weekly rotisserie chicken carcass for nearly a year now. You can get a decent stock with as little as 90 min, but I generally give it 2 hours. Based on this recipe I’ll try 3 hrs this week and see if it makes an appreciable difference. The flavour is immeasureably better than any grocery store offering and having it always available has vastly improved my soups, gravies and sauces.
