With these raspberry cream cheese cookies, I unleashed a monster. OMG! I wanted to have the recipe after discovering these incredible cookies at a nearby gas station… I finally got some assistance and developed this recipe for them. I’ve got you, Otis Spunkmeyer; go on. The flavor erupts out the cookie and into your tongue with ease! Despite not being as oozy as Otis Spunkmeyer cookies, these are AMAZING!

Ingredients

  1. 1 (8 ounce) package cream cheese, softened
  2. 1 egg
  3. 1 (17.5 ounce) pouch sugar cookie mix
  4. ⅔ cup raspberry baking chips

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  2. In a bowl, beat cream cheese until soft and fluffy with an electric mixer, then beat in egg until thoroughly combined. Mix in cookie mix, then stir in raspberry chips. Drop the dough about 2 inches apart onto the prepared baking sheets with a tablespoon or small scoop. Lightly pat the cookies to flatten.
  3. Bake in the preheated oven until the edges of the cookies are lightly golden, 9 to 12 minutes. Cool before serving.

I ordered raspberry tidbits from Amazon and they mistakenly sent me blueberry tidbits! I was wanting to make these cookies and didn’t want to wait until the replacement of raspberry tidbits arrived. I do a lot of baking & always trying new recipes. These cookies were horrible! I had my doubts when it called for a pouch of sugar cookie mix & rightfully so. I thought maybe the cream cheese & raspberries would make a difference & again I was wrong. I have found baking is so much better when from scratch. I realize not everyone has the time….but well worth it❤️

I made this recipe but added in 1 1/2 Cup of White Chocolate Chips to mimic the Raspberry Cheesecake cookies from Subway. They weren’t quite the same but were still super yummy! PS. If you’re having trouble finding the Raspberry Chips look on Amazon. That’s were I found mine.

WOW. These may very well be the most delicious cookies I’ve ever had. They’re seriously incredible. I ordered the raspberry baking chips (officially called Raspberry Tidbits) from Amazon. I very highly recommend using these rather than a substitution. I also used Renewal Mill upcycled sugar cookie mix (15 oz package). Baked for 12 minutes, which was perfect. I look forward to sharing these with everyone I know and also experimenting with the recipe! Some chocolate chips would be a great addition.

As many other reviewers mentioned. I also wasn’t able to find raspberry chips. I solved that by chopping some red vanilla melting wafers, and adding 1 tsp raspberry flavoring. The cookies turned out great. Next time I ll add a bit more of the flavoring. Delicious cookies!

Used real raspberries could not find the raspberry chips. Cookies don’t have much taste using the bag cookie mix. Probably would not make again.

These were absolutely terrible. My father, nephew, and boyfriend thought they were ok but the taste was just so unpleasant to me. They lacked sweetness. They were mushy and never seemed to cook. I was so disappointed. I will definitely avoid a sugar cookie mix next time. Maybe it’d turn out different if I made a different type of cookie.

This is a great basic cream cheese cookie shortcut that can be enhanced with just about any add ins! I added about 4 tablespoons of softened butter and 1/2 tsp vanilla, but otherwise followed the recipe, omitting the raspberry chips. Instead I made some with mini semi sweet chocolate chips, and others with a dab of raspberry jam in the middle (thumbprints). Both were very good. I plan on making these again tomorrow for a bridal shower and will be making two different variations: 1) one batch will contain well drained chopped maraschino cherries and a little almond extract 2) the other will contain chopped apricots. I will lightly glaze both batches (maybe I’ll add a little lemon juice to the glaze for the apricot ones). A nice little shortcut recipe that’s definitely a keeper. Oh and another thing: I’m making these cookies pretty petite since they’re for a shower and I want them to be dainty. Give them a try!

Make raspberry baking chips by stirring in raspberry extract & red food color into melted white chocolate, then breaking it into bits once it sets . I used Ghirardelli white chocolate melting wafers. These cookies will have the ‘box mix’ taste. Use your own super cookie recipe if you prefer..
