An old Seattle recipe for transforming overripe bananas into a delectable dessert is this straightforward banana cake.

Ingredients

  1. 4 tablespoons salted butter, divided
  2. 1 (12 ounce) package Impossible Burger
  3. 2 medium shallots, chopped
  4. 2 cloves garlic, chopped
  5. 1 cup frozen peas and carrots, thawed
  6. 8 ounces brown gravy
  7. 1 tablespoon Worcestershire sauce
  8. salt and ground black pepper to taste
  9. 2 cups mashed potatoes
  10. 1 cup shredded sharp Cheddar cheese
  11. 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Heat 1 tablespoon butter in a 10-inch skillet over medium to medium-high heat. Cook and stir the meatless ground beef with shallots and garlic until browned and crumbly and shallots are soft, about 10 minutes. Add peas and carrots, gravy, Worcestershire sauce, salt, and pepper. Saute for 5 minutes.
  3. Spread the mixture onto the bottom of a 10-inch round baking dish. Spread mashed potatoes evenly over the top. Sprinkle with Cheddar cheese and dot with remaining butter.
  4. Bake in the center of the preheated oven until the cheese and butter have fully melted, about 20 minutes. Top with parsley and serve.
  5. You can use brown gravy from a jar, can, or packet and 1 medium onion, chopped, instead of shallots.
  6. You can add any veggies you like to the mixture! Try mushrooms or chopped tri-colored peppers. You can also top it with sour cream or avocado after baking!

This is simple and delicious. I used a powdered brown gravy mix and frozen peas and carrots. I reduced the cheese to maybe 1/2 cup out of personal preference. I’ve made this twice now and it will be in my regular rotation.
