Imperial Cinnamon Red Hot® Cookies

White chocolate chips and toffee were swapped out for cinnamon chips and Imperial Red Hots® in this variation on the classic white chocolate toffee cookie recipe. Both family and friends love these!

Ingredients

  1. 1 ⅔ cups all-purpose flour
  2. 2 tablespoons ground cinnamon
  3. ¾ teaspoon baking powder
  4. ½ teaspoon baking soda
  5. ½ teaspoon salt
  6. ¾ cup butter, softened
  7. ¾ cup firmly packed brown sugar
  8. ⅓ cup white sugar
  9. 1 teaspoon vanilla extract
  10. 1 large egg
  11. 1 ½ cups cinnamon chips
  12. 1 ½ cups cinnamon candies (such as Red Hots®)

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Mix flour, cinnamon, baking powder, baking soda, and salt together in a bowl.
  3. Beat butter, brown sugar, white sugar, and vanilla with an electric mixer in a large bowl until smooth. Beat in the egg until completely incorporated.
  4. Gradually beat flour mixture into butter mixture until combined. Fold in cinnamon chips and cinnamon candies, mixing just enough to evenly combine.
  5. Drop spoonfuls of the dough 2 inches apart onto ungreased baking sheets. Bake in the preheated oven until lightly browned, 8 to 11 minutes. Cool on the pans for 2 minutes before removing to cool completely on a wire rack.
  6. Cinnamon can be increased to taste.

This is a fun recipe for Valentine’s Day. I cut back the imperial hearts to 3/4 cup and the cinnamon chips to 1 cup. The dough just can’t hold any more. Also let cool on the pan for 3 minutes, otherwise candies are very gooey and make it hard to de-cookie the sheet.

Tasty, and easy to put together. I had to go to the local cake decorating shop to get the cinnamon chips, as the grocery stores nearby didn’t carry them. I accidentally baked them at 350, and at that temperature, they went 10 minutes in the oven. These will be a great addition to our Christmas cookie plates!
