Ice Cream Freezer Pops

Ingredients

  1. 1/2 package sandwich cookies (12 to 14 cookies) , crushed
  2. 15 regular-size peanut butter cups, crushed
  3. 10 ounces candy-coated chocolate pieces (about 1 cup), crushed
  4. 1/2 gallon very good quality vanilla ice cream, slightly softened

Instructions

  1. Combine the crushed cookies, peanut butter cups and candy-coated chocolate pieces and add a spoonful to the bottom of each paper cup. 
  2. Scoop the ice cream into a large bowl of a mixer, then pour in the remaining chocolate-cookie mix. Mix gently with a paddle attachment. Spoon the ice cream into the cups and carefully insert a popsicle stick into each pop. 
  3. Freeze until the ice cream has solidified. Tear off the paper cups to serve.

I’ve been making these since my kids were little. You can mix in any kind of ingredients. A favorite is to take about 1/3 of a pumpkin pie, which I’m happy to make at the drop of a hat all year long, smash it up crust and all and freeze it then fold it into the vanilla ice cream. My kids favorite was mini M&Ms.

sound really good but any suggestions for substituting the peanut butter cups??? my daughter is highly allergic to peanut butter.

Very good, BUT you MUST find ice cream that is not made with “gums” (like guar gum, etc.) or fillers, because those are added to make the ice cream ‘always’ be soft and never get hard.

Ok, this recipe is very dangerous. I kinda did my own thing and really added the calories to it. Used cookies and cream ice cream. Three different candy bars. Added a layer of carmel sauce (Ree’s easy carmel sauce). And then topped it off by adding a chocolate hard shell coating. Wow, let the sugar high begin!!

These really are, as Ree described, “milkshakes on a stick”. They are a child’s dream sundae on a stick!!! Very easy go-to ice cream dessert. I love these pops.!!!!!! I really do not have anything to add!!
