Ingredients
- 2 cups all-purpose flour
- 1 tablespoon garlic powder
- 1 tablespoon cayenne
- Kosher salt and coarsely ground black pepper
- 1 cup buttermilk
- 1 egg
- 1 tablespoon Dijon mustard
- Four 4-ounce cube steaks
- 2 cups canola oil
- 2 tablespoons cayenne
- 2 teaspoons dark brown sugar
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- 4 kaiser buns
- 2 tablespoons mayonnaise
- Bread-and-butter pickles
- Bamboo sandwich skewers
Instructions
- Preheat the oven to 200 degrees F.
- For the steak: Combine the flour, garlic powder, cayenne, and 2 teaspoons each of salt and pepper in a medium bowl; whisk to blend. In a second medium bowl, whisk together the buttermilk, egg and mustard.
- Sprinkle the steaks on both sides with salt and pepper, then dredge in the flour mixture; dust off any excess. Now dip the steaks into the egg mixture; shake off any excess before returning the steaks to the flour mixture a second time; again, shake off any extra flour. Place the steaks on a wire rack set over a baking sheet. Let sit for 10 minutes to allow the breading to form a dry crust.
- Meanwhile, in a 12-inch cast-iron skillet over medium heat, heat the canola oil to 350 degrees F, or until it begins to ripple in the center. Add the steaks and cook until golden brown on the bottom, about 2 minutes. Flip, and cook another 2 minutes. Remove to a wire rack set over a baking sheet and keep warm in the oven. Do not discard the frying oil.
- For the sauce: Wisk together the cayenne, brown sugar, paprika and garlic powder. Slowly pour in 1/3 cup of the hot frying oil. Whisk until well combined.
- For the sandwich: Spread the bottom of each kaiser bun with mayonnaise. Add a steak, some sauce, and then some pickles. Secure the bun top with two skewers. Slice in half and serve.
- EAT CAREFULLY!!! This is HOT chicken-fried steak!

I will attempt to make this recipe again. First attempt wasn’t a disaster but it was close. Steaks were not cooked fully to medium rare with said time in the recipe. It may have been the oil wasn’t hot enough. The breading wasn’t flavorful just spicy. Had a mishap with the sauce which was my fault. Will attempt one more time. Not in the near future….
My family loves this sandwich. It’s spicy and full of flavor.
This was a disappointment. The sauce looked good “visually” but i shouldve thought about it – dripping oil on your steak is yucky. It tasted greasy and rather flat. The only note was cayenne. Im not going to repeat this. Perhaps if you heated up bbq sauce and put the meat in that before putting on the bun it mightve been better? Cheap cut of meat, that part is good, but the flavor wasnt at all yummy.
After a childhood filled with cost saving meals I have yet to see a cubed steak recipe that I wanted to try until I watched this on the Food Channel. I was a little shocked on the oil in the sauce ingredient but will definitely use non fat yogurt instead – maybe using 1 or 2 teaspoons of hot oil if any… yum can hardly wait.
I’ve made these twice now and my bf is obsessed. The first time I followed the recipe to the letter. It wasn’t salty enough for me and all I tasted was heat. So I modified it a little tonight. I used Lawry’s garlic salt in the dredge, on the cubed steak and in the sauce. I omitted the mustard because I was running low, but I didn’t miss it. I also added more brown sugar to the sauce. It was still hot but a much more enjoyable flavor. I had never eaten bread and butter chips, they’re the perfect accompaniment. BF said the second go was even better than the first.
After reading all the posts in regards to the sauce, I mixed the spices in with Hellmans mayonnaise instead of the oil and spread it on the bun. Great flavour!
I am so excited to try this. I’ve saved the video everywhere I can think of (FB, Pinterest, home computer, etc.) I’m fond of spicy foods and I think this recipe will become a favorite really, really fast! Thank you for what you do Damaris.

We had this for supper tonight. It was absolutely delicious! The bread n butter pickles were fantastic with the spiciness. The only thing I’ll change next time is to use something other than the oil in the sauce. While the taste was good, the oil was a little heavy on the tummy.
