Because it is so cozy, this recipe for baked lamb shanks is simply stunning. A copious amount of red wine is used to slowly simmer the meat. A burner and an oven are all that are needed for preparation. This tastes best when the pan juices are poured over soft polenta, sweet potatoes, pumpkin, or even creamy mashed potatoes.

Ingredients

  1. 1 (8 ounce) package cream cheese, softened
  2. ½ cup mayonnaise
  3. ½ cup sour cream
  4. 2 teaspoons minced garlic
  5. 2 cups grated Asiago cheese
  6. ½ cup minced fresh parsley
  7. 1 ½ cups frozen chopped spinach, thawed and drained

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine the cream cheese, mayonnaise, sour cream, and garlic in a mixing bowl. Add the Asiago cheese and parsley; mix well. Press as much moisture out of the spinach as you can; stir into the mixture. Spread into the bottom of an 8 1/2 x 10 baking dish.
  3. Bake in the preheated oven until the middle is bubbling and the edges are golden brown, 20 to 25 minutes.

Easy peasy and delicious. Modifications I made were: instead of an onion, I used a shallot. And, instead of Asiago, I used an 8oz. package of four-cheese blend. Definitely will be a go-to from now on.

Wow! Amazing! I added a bit more sour cream and mayo (about 1/4 cup each) and that made it very creamy rather than stiff. So good! Was generous with the garlic, and also sprinkled a little more asiago on top before baking. I’m a cheese lover so it makes me happy but not necessary. It’s 10:30 at night and I’m still dipping into it!

I got many rave reviews about this dip. Great texture and taste. Also, really easy to make. I just mixed the ingredients in a small crock pot, put in on about 2 hours beforehand, and it was ready for guests. I changed the amount of parsley. I only added about 2 tablespoons, as the spinach was enough on the flavor and greenery. Also, I added about a cup of corn to the mix to give it a little extra color.

Use mozzarella instead of Asiago and use fresh spinach. Most amazing dip ever!!!! I usually double the garlic too

Wow! Best spinach dip I’ve ever had! Just a couple small changes : I used fresh spinach because that’s what I had on hand and I replaced the 1/2 cup of mayo with a 1/2 cup of plain Chobani Greek Yogurt. The yogurt made it so light and airy. Amazing!
