Yield: | 16 pretzel sticks (serving size: 1 stick) |
Ingredients
- 1 packet instant yeast (2 1/4 teaspoons)
- 3 tablespoons honey
- 1 1/2 cups warm water
- 2 1/4 cups whole-wheat flour
- 2 1/2 cups all-purpose flour, plus more, if necessary
- 1 tablespoon plus 2 teaspoons kosher salt
- 2 tablespoons canola oil
- 1 egg
- 1 teaspoon water
- 1 tablespoon sesame seeds
Instructions
- Preheat the oven to 425 degrees F.
- Combine yeast, honey and warm water in the bowl of a stand mixer fitted with the paddle attachment. Let sit for 5 or 6 minutes, or until mixture begins to foam. While yeast mixture is sitting, combine whole-wheat flour, all purpose flour and 2 teaspoons salt in a bowl and whisk to combine. Add flour mixture and oil to yeast mixture and mix on low speed until just incorporated and dough begins to form. Switch to dough hook and mix on low to medium speed for 2 to 3 minutes, or until dough is smooth but still pliable. If the dough is very sticky, add all-purpose flour, by the tablespoon, as necessary.
- Remove the dough from the bowl and roll into a long log. Cut log into 16 pieces and roll each piece into a 10 by 1-inch tube. Spray 2 baking sheets with cooking spray. Twist each dough stick several times and arrange sticks on cookie sheets, about 1 to 1 1/2 inches apart. In a small bowl beat the egg with water and brush on dough. Combine 1 tablespoon salt with sesame seeds and sprinkle evenly among dough pieces. Bake for 18 to 20 minutes, or until a golden crust has formed but pretzels are still soft inside. Remove from oven and cool completely.

Reviews
Like a fellow review, these are more “bread like” rather than the normal pretzel taste.
Recipe was very easy to follow and all the ingredients are low cost . I ended up with eleven 10″ sticks. Prep and total time it takes to make them was a big plus for me. I ate almost half the first batch by myself. dipped them in honey. For my second batch, I’m going to add a little more honey and possibly coat them in a honey butter mix or something for the salt to stick to. The egg does work, just trying to add a little more flavor to them

Just what I was looking for: a healthy satisfying snack! I shaped mine as traditional pretzels and used a little more whole wheat flour because I wanted a heartier taste, a little more honey, an egg white instead of the whole egg, and I sprinkled some of them with salt, some with cinnamon and sugar, and some I just left plain for a little variety. I found the nutritional information out to be about 160 calories and 3g of fat per pretzel. I am a college student and these are great to snack on between classes. Much easier to make than I had expected!
I added a little extra honey and chose to twist them into traditional pretzels instead of sticks, but overall very good, and I will be making these again! 🙂
Extra yummy. Definitely more bread-like than crunchy pretzel, but that was exactly what I was going for.
I made these today, and I was surprised how easy they were. They had a nice fresh bread taste, more like bread than Pretzels, but good. I used 3 1/2 cups of freshly ground hard white wheat flour, and 1 1/4 C all purpose flour. The dough was a little sticky, so I used just a tiny bit more flour while rolling them out. I actually shaped them like real pretzles, which was fun. The baking time was spot on. I’ll be making these again for a fun snack for my kids!
good!
Everything is listed except how many are per serving – kind of hard to determine what you’re eating for nutrition if there is no serving size.
