Honey Rosemary Snack Mix

Ingredients

  1. 1 cup (2 sticks) unsalted butter
  2. 3 tablespoons honey
  3. 1/4 cup chopped fresh rosemary
  4. 2 teaspoons kosher salt
  5. 3 cups wheat square cereal
  6. 3 cups crisp rice square cereal
  7. 3 cups oat o’s cereal
  8. 3 cups fish-shaped crackers, plain (not cheese)

Instructions

  1. Preheat the oven to 300 degrees F and line a baking sheet with parchment paper.
  2. Place the butter and honey in a small saucepan over medium heat and cook until the butter is melted, about 3 minutes. Stir in the rosemary and salt.
  3. Combine the cereal and crackers in a large bowl. Pour over the melted butter and toss well to coat, then pour the snack mix onto the prepared baking sheet. Bake on the center rack, stirring once or twice during baking, until the snack mix is toasted and fragrant, about 40 minutes. Allow to cool before storing in an airtight container.

OMGEE this is awesome. Be sure to make this for a crowd or you will eat it all yourself. I could not find plain goldfish so I used oyster crackers. So yummy! Thank you Valerie

Just made this today. Very good! I love Rosemary. I added 1/4 teaspoon Cayenne Pepper. Perfect amount of spice along with the sweet from the honey and salty from garlic salt. I didn’t have the “Oat-o’s” so used Salted Cashews. Will definitely make again!

I made a half batch of this to see if we liked it…it disappeared.  Multiple batches since then and they are scarfed down in no time!  It is a unique sweet-salty mix (though not overly sweet or salty) that is delicious.  A definite keeper.
