Ingredients

  1. 1 pound red new potatoes, quartered
  2. ¼ cup diced onion
  3. 2 tablespoons butter, melted
  4. 1 tablespoon honey
  5. 1 teaspoon dry mustard
  6. salt and ground black pepper to taste
  7. 8 sprigs fresh parsley

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9×13-inch baking pan.
  2. Spread potatoes in a single layer in the baking pan and top with onion. Stir together melted butter, honey, dry mustard, salt, black pepper in a bowl. Drizzle mixture over potatoes; toss to coat.
  3. Roast in the preheated oven, stirring halfway through, until tender, about 35 minutes. Garnish with parsley sprigs.

OMG are these addictive. I was taken aback at first, not accustomed to potatoes tasting sweet instead of savory, but quickly realized I love these little taters. The sweetness is very mild, so they are a nice surprise for the taste buds . I will be making these frequently in the future. They are incredibly quick and easy to assemble, then just let the oven do the work.

WE LOVE THIS RECIPE! A favorite side to meals, we haven’t had anyone not LOVE them, all year round! We cut up the potatoes a bit more (easier for kids to eat) it’s so TASTY DELICIOUS but not “spicy” so everyone loves it yum!

I prepared this in the air-fryer, cooking the potatoes for 20 minutes, adding the onions for the last 5 minutes (or else they’d have burnt). Really good. Will make it again.
