Honey-Pecan Mini Muffins

This casserole has a flavor that is similar to a tasty Philly cheesesteak. Ketchup must be served with, despite the fact that it goes against my typical condiment guidelines. However, neither is its namesake, so it’s not exactly low in fat.

Ingredients

  1. 1 serving cooking spray
  2. ⅓ cup melted butter, at room temperature
  3. ¼ cup honey
  4. 2 large eggs, lightly beaten
  5. 1 teaspoon vanilla extract
  6. ½ cup light brown sugar
  7. ½ cup all-purpose flour
  8. ½ teaspoon baking powder
  9. ¼ teaspoon salt
  10. 1 cup chopped pecans

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C). Spray a 24-cup mini muffin tin with cooking spray.
  2. Whisk butter, honey, eggs, and vanilla extract together in a bowl.
  3. Stir brown sugar, flour, baking powder, and salt together in a bowl. Make a well in the center, and pour butter mixture into the well. Stir just until batter is combined.
  4. Sprinkle 1/2 of the chopped pecans into the bottoms of the prepared muffin cups. Spoon batter evenly over top, until just about full and sprinkle with remaining pecans.
  5. Bake in the preheated oven until a toothpick inserted in the center comes out clean, 10 to 12 minutes. Leave the muffins in the pan for about 5 minutes before removing to serve.

These were very tasty! I omitted the pecans simply because I forgot them at the store, but they’re just as tasy without. I think they’d be good with the nuts, too. Definitely bake according to your oven; I put them in for the whole 12 minutes and they got a bit burned. Overall very poppable and would try again, hopefully with the nuts next time!

I tried this recipe for the first time, and I LOVED it! They were the perfect size for snacking on. My husband almost ate every last one of them. I am going to make another batch tomorrow. If I would change anything about the recipe, it would be to grease and flower the muffin tins because they were a little hard to come out. It’s probable because of the honey and brown sugar, but the recipe did not disappoint! It’s a must try!

While baking this, I ran out of ingredients, mismeasured, and by the time I put them in the oven I was ready to be over with it. But when the muffins came out, it was totally worth it. They’re very delicious. Moist, warm, and sweet muffins that really made my day.
