- 2 tablespoons olive oil
- 1 pound skinless, boneless chicken breast, cut into 1-inch cubes
- 2 large carrots, minced
- ¾ cup chopped celery
- 2 cloves garlic, minced
- 1 cup orange juice, or more as needed
- ¼ cup honey
- ¼ cup soy sauce
- 2 tablespoons cornstarch
- ¼ teaspoon ground ginger
- ⅔ cup salted cashews
- 2 cups hot cooked rice
Instructions
- Heat oil in a large skillet over medium-high heat. Add chicken, carrots, celery, and garlic; stir-fry until chicken is no longer pink in the center and juices run clear, 7 to 10 minutes.
