Ingredients

  1. 2 tablespoons olive oil
  2. 1 pound skinless, boneless chicken breast, cut into 1-inch cubes
  3. 2 large carrots, minced
  4. ¾ cup chopped celery
  5. 2 cloves garlic, minced
  6. 1 cup orange juice, or more as needed
  7. ¼ cup honey
  8. ¼ cup soy sauce
  9. 2 tablespoons cornstarch
  10. ¼ teaspoon ground ginger
  11. ⅔ cup salted cashews
  12. 2 cups hot cooked rice

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add chicken, carrots, celery, and garlic; stir-fry until chicken is no longer pink in the center and juices run clear, 7 to 10 minutes.
  2. Meanwhile, combine 1 cup orange juice, honey, soy sauce, cornstarch, and ginger in a small bowl; mix until blended. Pour into the chicken mixture and bring to a boil.
  3. Cook until sauce has thickened, 5 to 10 minutes longer. Stir in cashew and more orange juice if too thick. Serve over hot rice.
