Honey Glazed Grilled Pineapple

Ingredients

  1. 1/4 cup honey
  2. Juice of 2 limes (depending on how juicy the limes are)
  3. 1/2 teaspoon ground cinnamon
  4. 1/2 pineapple, cut into 3/4-inch thick rings, core removed
  5. 3/4 cup vanilla ice cream

Instructions

  1. In a baking dish, mix together the honey, lime juice, and cinnamon. Place the pineapple slices in the glaze and let marinate 2 hours, turning occasionally.
  2. Preheat a grill pan over medium heat.
  3. Place the pineapple slices on the preheated grill. Grill on both sides until the glaze caramelizes and grill marks form, about 2 minutes per side.
  4. To serve: Place the pineapple slices on individual plates and top with a scoop of ice cream. Drizzle the remaining honey syrup over the top.

Kids and husband liked this dish alot. I thought the lime was a little over powering, will make again but reduce the lime juice

This is so good. Honestly I am at a lack for words because this is just that good…. like wake-in-the-night-thinking-about-making-more-of-this-for-breakfast good.

However– I will pass along a bit of wisdom– mind how hot you let the sauce get or you will make hard candy… especially if you are using cast iron pans. *still chiseling*

Awesome recipe. Delicious dessert. Made it last night. Didn’t have the 2 hours to marinate. It was probably 15 minutes. Didn’t have cinnamon, replaced it with a sprinkle of allspice. Slices really develop a great glaze. And the syrup was very flavorful and perfect topping for the ice cream;
One slice stayed forgotten on the hot grill. I realized after a while. Never burned. Just developed a deeper color glaze, with the marks of the grill slightly darker. It still tasted wonderful!

This dessert was delicious and easy to make – a big hit w/ my family. Very reasonable too. Pineapple cost me $2.99 which gave me at least 8 slices. I got 1.5 quarts of ice cream for $3.50 (on sale). Each serving was 1 slice of pineapple w/ 1/4 to 1/2 cup ice cream. Total was less than $1.00. Even going with 2 slices per serving for 4 is still a great value. But the best part is the dessert is delicious!

This is a good recipe. It is not new and you can find hundreds of versions of this on the internet.

It is NOT FRENCH!

Melissa says that the whole dessert costs $3. NO WAY! You cannot get a fresh pineapple EVER for less than $3 and a pint of ice cream on sale is $3.39 or $2.99 if you are lucky to find it on sale. There is no way that you can spread 1/4 c of ice cream over four people.

The worst part of this recipe is that Melissa sliced the pineapple on the same wooden board that she sliced the raw bacon on and she only gave the board a swipe with her kitchen towel after the bacon and she did NOT wash her hands. She merely wiped them off on the same towel that she wiped the board with.

If she uses these practices, she is going to kill her small children or make them very sick at the least.

Take her off the air.
