Honey-Glazed Grilled Calamari over Wilted Spinach with Capered Couscous

Ingredients

  1. 1 cup couscous
  2. 1/4 cup drained capers
  3. 1 teaspoon dried oregano
  4. 1 tablespoon freshly chopped parsley leaves
  5. Salt and freshly ground black pepper
  6. Cooking spray
  7. 1 pound calamari, whole bodies
  8. Lemon pepper, to taste
  9. 1/2 cup honey
  10. 1 tablespoon rice wine (mirin)
  11. 2 teaspoons olive oil
  12. 2 cloves garlic, minced
  13. 1 (10-ounce) package fresh spinach

Instructions

  1. For the capered couscous: Cook couscous according to package directions, adding capers and oregano at beginning of cooking time. Add parsley and season, to taste, with salt and black pepper just before serving. 
  2. For the calamari: 
  3. Coat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat. Season both sides of calamari with salt and lemon pepper. Place calamari on hot pan and cook 2 minutes per side, until golden brown. In a small bowl, whisk together honey and rice wine. Brush mixture over both sides of calamari and cook 1 to 2 more minutes per side, until cooked through and opaque. 
  4. Meanwhile, heat oil in a large skillet over medium heat. Add garlic and cook 1 minute. Add spinach, cover and steam 1 minute, until spinach wilts. Season, to taste, with salt and black pepper. Slice calamari crosswise into rings and serve over wilted spinach. Serve couscous on the side.

The honey glaze had a lot of honey and I felt it was too sweet. But the idea is great! So I added some fresh grated ginger and fresh grated garlic, red pepper flake and rice vinegar. It was DELICIOUS!! We used it on grilled shrimp too! Robin has some great recipes and leftover ideas!!

My one star is because the recipe is not the one cooked on the program. Fortunatly I read the reviews first. i saw the show on Dec 8 2010 which must have been a rerun. I wanted to make the calamari but read the reviews first and agree the printed recipe does not match the show broadcast. Very dissapointed – I did want to try it but now I’m not going to.

I rated the show 5 stars, not the recipe on the internet. The show recipe is different from the written one on here. I should have written it down while watching the show. This happens a lot, WHY?

This is NOT the recipe I watched today. Please edit the recipe to include the ingredients used on show. Where’s the red pepper in the couscous recipe (see photo)? Where are the dried pepper flakes in the calamari? The show served the calamari whole on top of the couscous with spinach on side of plate. I came here since I missed the first 5 minutes of the show. I give the show recipe 5 stars (that’s based on looks only!) – this printed version only gets 2. If you read these reviews, Robin, please send me your show recipe or edit this one to match your show.
