Ingredients

  1. 1 slice bacon, thinly sliced*
  2. 2 tablespoons vegetable oil
  3. 1/2 small onion, finely chopped
  4. 3 cloves garlic, minced
  5. 2 tablespoons plain dried bread crumbs
  6. 2 teaspoons brown sugar
  7. 3/4 teaspoon dried thyme
  8. 1/4 teaspoon cayenne pepper
  9. Kosher salt and freshly ground black pepper
  10. 8 ounces 72% lean ground pork
  11. 1 egg yolk
  12. 1 tablespoon water

Instructions

  1. In a small saute pan, cook the bacon over medium heat until rendered but not crispy, about 3 minutes. Add 1 tablespoon vegetable oil and onions, and cook until the onions are soft and begin to turn golden in color, about 3 more minutes. Add the minced garlic and cook an additional 1 minute, or until fragrant. Remove the pan from the heat, and set aside.
  2. In a medium bowl, use a fork to mix together the bread crumbs, brown sugar, thyme, cayenne pepper, and salt, and pepper. Add the ground pork, egg yolk, and bacon and onion mixture to the bread crumbs, and gently mix with your hands until just combined. Do not over mix. Divide the mixture into 8 even portions and form into patties, pressing a small thumb indentation in the middle of each so they stay flat when they cook. In a large saute pan, heat 1 tablespoon vegetable oil over medium-high heat. Add the sausage patties and brown on both sides, about 2 minutes per side. Add a tablespoon of water and cover the pan for 3 minutes, or until the sausage is fully cooked. Serve hot.

This was a good mix for sausage, but salt liberally and I upped the thyme a little. I didn’t use the water method though to cook them. They browned quickly and cooked through on their own just fine.

I don’t know if the last step was a great idea, when I added the water to the pan it made my sausages soggy. As for the thyme, I just added less than the recipe called for and substituted the brown sugar for maple syrup(the real kind not Mrs.butters worth. Next time I will just skip the last step and cook them low and slow, with no water.

I left out the sugar AND the breadcrumbs and these were still absolutely delicious!

Great recipe! I added sage and cut down on the sugar after reading the reviews and it was excellent. Great with my Dutch Baby brunch! Thanx Melissa!

These were amazing! I made them together with the puff pancake on the same episode and it was a great breakfast. These were so good, I couldn’t stop having them by themselves.

This was different. I found the dish to be a lot of work for just an okay flavor. I enjoy sausage and I’d rather just buy good sausage and spend my time making something else instead of this.
