Homemade Pineapple Whip with Toasted Coconut and Macadamia Nuts

Ingredients

  1. 24 ounces frozen pineapple chunks
  2. One 15-ounce can coconut cream
  3. 1/2 lime, juiced
  4. 1/2 cup pineapple juice
  5. 2 cups semi-softened vanilla ice cream
  6. 1/4 teaspoon kosher salt
  7. Toasted shredded coconut, for garnish
  8. Toasted and chopped macadamia nuts, for garnish
  9. Dried pineapple rings, for garnish

Instructions

  1. In a blender, combine the frozen pineapple, coconut cream, lime juice, pineapple juice, vanilla ice cream and salt until smooth and creamy (see Cook’s Note). Transfer the mixture to a piping bag with a large star tip and pipe into 5 to 6 glasses. Garnish with the toasted coconut, macadamia nuts and a dried pineapple ring on the side of each glass.

I’m sorry to say I didn’t care this at all. It tasted like eating frozen pineapples and nothing else. Oh, well, they can’t all be winners.

Loved it! Tasted so good and I also did a mango version, just swapping out pineapple for mango – both delicious!!
