This martini has all the delectable tastes of rhubarb cream pie packed inside: it’s creamy, sour in a good way, and sweet. Perfect as a post-meal beverage or whenever you want something sweet. There will be enough crumbs left over to rim 6–8 drinks.

Ingredients

  1. ½ cup white sugar
  2. 2 tablespoons all-purpose flour
  3. 1 teaspoon prepared mustard
  4. ½ teaspoon salt
  5. ¼ cup white wine vinegar
  6. ¼ cup water
  7. 1 egg, beaten

Instructions

  1. Whisk together the sugar, flour, mustard, salt, vinegar, water and egg.
  2. Cook in a double boiler until thick; allow to cool. Mix with equal parts mayonnaise and stir into potato salad.

This is a nice alternative to mayonnaise-based potato salad. This tastes very similar to the dressing that my Father put over dandelion greens when I was a child. It’s just a little too sweet for our taste, so I will try 1/4 cup sugar next time, but this is a good recipe.

This was nice and creamy, but it was too sweet for my taste. I would decrease the sugar to 1/4 cup and increase the mustard to 2 teaspoons.

Great dressing! I needed a new recipe for Potato Salad and tried this one. Everyone loved it. Very creamy, easy to make and tasted wonderful. Will use this again!
