Holly’s Shrimp Corn Bread

When you can create this fancier version of corn bread with shrimp, Creole flavor, and Cheddar cheese, why make ordinary corn bread? On a CW episode of the Dinner Spinner TV show, this recipe was created with a Panasonic CIO!

Ingredients

  1. 2 cups yellow cornmeal
  2. 1 teaspoon baking powder
  3. 1 teaspoon salt
  4. 1 teaspoon Creole seasoning (such as Tony Chachere’s®)
  5. 6 eggs
  6. 10 tablespoons butter, melted
  7. 1 (16 ounce) package frozen corn, thawed
  8. 12 ounces cooked shrimp, coarsely chopped
  9. 1 (8 ounce) package shredded sharp white Cheddar cheese
  10. 1 cup minced yellow onion
  11. 2 large jalapeno peppers, minced
  12. 2 tablespoons shredded sharp white Cheddar cheese

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). (If using a countertop induction oven, preheat to 325 degrees (165 degrees C)). Grease a 9-inch baking dish.
  2. Combine cornmeal, baking powder, salt, and Creole seasoning in a bowl. Add eggs and butter; mix until smooth. Fold corn, shrimp, 8 ounces Cheddar cheese, onion, and jalapeno peppers into the batter. Spread in the prepared dish.
  3. Bake in the preheated oven until golden brown, about 25 minutes.
  4. Sprinkle 2 tablespoons Cheddar cheese on top; continue baking until melted, 2 to 3 minutes. Let stand for 10 minutes before slicing.
  5. Substitute langostino, crawfish, lobster, or prawns for the shrimp if desired. You can also add cooked sausage.
  6. Substitute your favorite semi-hard cheese for the white Cheddar cheese if desired.
  7. Remove the seeds from the jalapeno pepper for less heat.

Like many others mine came out very with a strange texture. The shrimp and corn came out good and the taste was good but I wonder if adding sugar,more seasoning and a couple of ounces of water or milk would have made it better.

I did add roasted red pepper to the mix, plus I semi cook the shrimp with garlic and a blend of fresh spices and a touch of lemon. Also I subs the yellow onion mice for sheredd red onion.
