I made these cookies with my 8 year old for teacher gift bags. They were beautiful and very impressive but amazingly easy. The cookie is very tasty, but the Jolly Rancer in the middle was the star of the show. Watch them, though, because the candy burns before the cookie. We will be making more today for us since we gave all of them away. Can’t wait.

These window pane cookies are easier to make than I thought. Make sure to use a silicone mat to stop the candy from sticking during baking. The candy doesn’t have to be smashed into powder to work. Bigger chucks are okay. When rolling out the dough, don’t be afraid to flour your surface well. Also, sprinkle the rolled out dough with some sugar liberally and roll sugar into dough surface. The cookies don’t brown up, so don’t wait for that to make sure they’re done. When spooning the smashed candy onto the hot cookie, if you want a nice presentation, use an 1/8 tsp to spoon the candy into the hole and don’t leave any crumbs of candy on the cookie outside the hole you’re filling or it melts onto the cookie. Leave on the mat for few minute after taking out of the oven for the candy to re-harden.
